Pressure Cooker PSI's

So I haven't done any cultivation for years and even when I did it was only small cakes.

Now I want to get back into it but I want to start using a PC for jars. I've been doing research for weeks now and the one thing I'm going round in circles with is finding a PC.

I'm in the UK and most PC's don't go higher than 13 PSI but everything I read states you need at least 15 PSI and all discussions are extremely old. Also anything designed for canning is very hard to get and also very expensive so a PC seems like the only choice.

Is this a rule set in stone? Does the extra risk of contamination just make anything less than 15 PSI not worth it? I have found some PC's that state 15 PSI but they look like cheap Chinese crap but are still 3-4x the price of standard ones.

Any advice would be appreciated before I end up ripping my hair out.

I don't have much room and I use a: PRESTIGE 57059 high dome 6L, £55.00

This reaches 15 psi and is fine for my use. I use it daily to cook as well.

You can just increase cooking time and get away with lower psi.

Stipe posted a good thread where he tested multiple scenarios.

I can say that many years ago I used a pc that could only go to 12psi and used 500ml grain jars pc'd for 1hr.
It worked but I know better now and realize I could have had more success by pcing correctly.

Pressure sterilization is indeed necessary for proper sterilization of grains, with the Presto 23 being a recommended option for its capacity and performance, price point and size.  If using a pressure cooker with lower pressure, extending the cooking time can compensate for the difference.

Thank you for this. Will need to look into what's possible tho as I have an induction hob which this is not compatible with but I believe you can buy converter plates.

I have seen this PC mentioned a lot but these seem hard to get over here and run up to £300 ($370) brand new in the UK which I just can't justify this early on. I've seen them at around £150 second hand on ebay but even that just seems a bit unjustifiable right now.

I used to use an old Silit Sicomatic, which can be easily overpressured without largely compromising overall safety. Ran 500ml jars for 90 mins, and it worked. But yes as D said back a few posts there, I realise now looking back that I may have been more successful more often if I had have gone longer

I eventually bit the bullet and took a Presto brand new, german ebay, 200 euros or so. Best money I ever spent in this hobby. I promise you it is worth it, but if you really can't do it then yes, you can surely make a local PC work just fine with a little tinkering with your process
