Did you use a spore syringe to grain by chance?
And what strain is this supposed to be?

Ok thanks. Some threads on here say to wait until they are marshmallow squishy which about 70% feel like, the other 30% feel hard but if you think I should pick them all I am going to tomorrow

Also, is there anything I should do with the second flush as far as misting or just let the monotub do its job?

PE doesn't drop spores. I would harvest when the fruits are soft to the touch if you want them to achieve full maturity.
Your second flush should be less likely to blob. Just mist heavy and let it sit after harvest for about a day and then put it back into fruiting conditions. Maybe add a casing layer going into FC

This was another thing that confused me researching through this site. Most people said to most heavily on the second flush but I’ve seen a few that said with monotubs you don’t need to mist because they are co sidered neglect tech?

Interesting; that may give insight into why its looking the way it is.
Your work flow looked like this? Spore syringe into grains > colonize > grain to bulk > harvest. Assuming this is correct please consider.
Spores are comprised of thousands of male/female bits that form couplings to make a strain. (fungal sex) Unless of course you prefer the more specific "correct" descrption. Dikaryotic cells result from the fusion of two haploid gamete cells
So when you don't isolate the strains on agar first. You'll potentially get a hyper erratic genetic.
It should also be noted that Penis Envy is a fairly developed/mutated strain as well. Think Corgis coming from wolves for comparison.
These 2 factors may be resulting in what we're seeing!
Next time try doing that agar work first then put those better isolated strains into the grain instead of a spore syringe.

Thank you. I was planning on doing agar plates but wanted to do spore syringe until I familiarized myself with the process which seems to have been a bad idea. I still have a B+ and Cambodian syringe that I’ll try but after that it’s agar plates

When I said misting I was talking about rehydrating the substrate AFTER harvest. You shouldn't need to mist in between harvests IF your fruiting chamber has a balanced mix of FAE to retain moisture while also letting enough air to come in and escape on its own.

Ok got it. Am I looking to achieve about the same amount of moisture in the substrate as the first flush? Just wondering how much to mist and can I technically over mist the second flush in a monotub

For flushes beyond the first I prefer to mist lightly for surface conditions & pour some water down the side to bottom water the entire mycelial cake. (Making sure not to get it on the top of the cake. Don't want pooling.)
Tidbits A fully colonized substrate is pretty resistant to contamination; but with each flush the organism loses some vitality. Eventually resulting in a mycelium unable to generate more fruit; a decomposer-- now being decomposed by other decomposers.
