Boil or not to boil Rye grains

Hi guys
Finnaly got some clean Agar plates that I will transfer to Rye jars.
I have followed «willy’s world» on youtube on how to make the perfect Rye berries. He cleans them, adds gypsm, soaks it for 24 hours. Here comes my OCD, he just let it almost come to boil and stops.
I see that most boil for 10-20 minutes in the forums. Some boiling for 3 minutes and some for 5 minutes. Some even skip the soak part and just boil for 20-30 minutes even cleaning. Heck, some just Pressure cook it.
Which is right? And what is the reason behind so many different times? I don’t want to mess it up as it’s my first time..

Many ways to skin a cat. Different brands, different preps. Some don´t have time for a soak and just do flash prep, some do a long soak, whatever. Stick to a prep tek, try different and look what serves you most

What is the consenus?
- cleanse - add 1/4 teaspoon gypsum per cup for 1 quart hydrated, soak 24h - boil on high heat for 10 min - spread the rye on a rack and shake every 10 min for 30 min till surface moisture is perfect. Test with toilet paper
Good way to start?

It's not about the boil, it's about ideal hydration. You want them hydrated all the way through with out a lot of bursting.
I usually soak over night. Drain and replace with hot water, put on stove until first grain bursts, then strain. It doesn't always reach boiling. The only thing that matters is the quality of the finished product.

I've never soaked my rye, a rinse in warm water and a 15 min boil is all that's needed for me.

Essentially, I use Stipe's wash, soak, millet prep with a ten minute or so boil after the soak. 18 hour soak during the winter. 12 during the summer. They sometimes sprout for me if I leave them longer.
I check for doneness the same way I do pasta. It should be chewy but cooked through (el dente). I use rye berries labeled for human consumption, but if you wash your rye, you can still check by biting into them. For my stove and grains this is about a ten minute simmer. But your mileage will vary.
I strain and load into the jars without worrying about them being super dry. They'll hydrate a bit more in the PC and a few burst grains is okay. Many is not as it causes clumping which will slow your colonization times.
After the PC cycle I shake the jars to distribute moisture.
My ATL 7 collection.

A month or so later.

But this is just what works for me. All the advice in this thread I'm sure works too. Coming from a cooking background, I judge grains better by mouth feel than my other senses.
And I find value in soaking grains before boiling. I know it's not necessary. But for me it's helpful in getting even hydration with fewer burst grains.
But... I can't imagine skipping the boil and having them turn out nearly as well. Especially if running large jars.
Sometimes I use gypsum, sometimes I don't. Mostly I just have it around because I was told it was needed a long time ago. It doesn't really seem to matter one way or the other to the mycelium I've been working with

Boil 10 minutes. It gets that water deep into the germ.
Just make sure you dry them properly after straining. If you leave a handful on a poece of toilet paper and then pull it up only one or two should stick to the paper.
When they are in the jars they should tumble freely with the most oh so delightful "plink"

Something I like to do is “not put too many grains in one pot”. You want a good rolling boil but in order to get that without making a huge mess or cooking the grains unevenly (causing lots of splits) you need some space in your pot to stir them while cooking. I cook until grains start to pop. Sometimes this is only 8 or 9 minuets so keep that in mind. It’s not necessary a set time, there are different variables at play that could change the time ever so slightly.
Remove them from the heat IMMEDIATELY after the boil. If not the grains will keep cooking and turn into a starchy mess. Strain and then I like to use a giant aluminum turkey pan to spread out the rye into for drying. Give it a good shake every so often to get a good even dry.
I typically do 10lbs of rye at a time and it’s done in three runs. Most people mess it up because they cram too much grain in the pot to begin with, or let it sit after boil, or don’t dry it properly after. Just keep those steps in mind.
