It's a fun hobby for sure with delicious rewards. I do enough to have a year supply for myself, and give the rest to friends and family.

I'm going to jump on the bandwagon. I had 5 litres of birch sap in the freezer from the last time collected some.
I am thawing it out now by the stove, and going to boil it down to see what the birch syrup tastes like.
As per Wikipedia: The flavor of birch syrup has a distinctive and mineral-rich, caramel-like taste with a hint of spiciness that is not unlike molasses, balsamic condiment, or some types of soy. Different types of birch will produce slightly different flavour profiles; some more copper, others with hints of wildflower honey. While birch syrup has the same sugar content of maple, it is darker, stronger, and more complex.

I did it anyways, I boiled 5 L of birch sap down to ~15 mL of syrup, so that's about 333L:1L (sap:syrup), not a huge return at all  But it does taste different to maple syrup and it does taste good, it has a stronger flavour than maple syrup, it is sweet, not getting spiciness, and it reminds me of liquid malt extract more than anything. I was watching videos earlier where people described the taste of their birch syrup as bitter, but there is no bitterness to the syrup I made. It smells nice too; my brother didn't know what I was making and walked into the room as it was close to end, and he said it smelled good, so there's an unbiased fresh nosed take on it too.
