See I have multiple chunks all in one large tote tub. Monitor temp at 60 to 62 and 99% humidity by spraying tub walls
I'm excited this culture is fruiting at this temperature and setup. It'll be fun

I love making gummies! Took a fresh Texas Orange shoebox (250g or so) and made two pitchers of tea (freezing one for later). This recipe works well for me (8oz sugar, 3 tbsp sorbitol, 8oz corn syrup, 6oz fun tea, 44g gelatin, food coloring, candy flavor oil โ made Orange Creme tonight). Yum.

Iโll toss them in sugar after they sit in the fridge overnight. Might let them get a few hours in the dehydrator on low low low as well.

semps are the strangest thing. harvesting leaves you feeling weirded out like you just killed a rubber alien and stuffed its body into a dehydrator.

They grow so much nicer when treated with more care and better fruiting temps.
Nice girthy fruits that actually look like fat dichs. Not these weird skinny alien worms. Keep getting 40ยฐc for much of this summer ๐

I basically follow this recipe ( https://sugargeekshow.com/recipe/real-gummy-bear-recipe/#recipe ). Some tips Iโve found useful: -make sure the tea is cool, and when adding the gelatin, have the tea in a dish with a large surface area โ like a Tupperware or something, and just sprinkle the gelatin on top evenly and let it sit for five minutes to absorb the tea -the sorbitol does make a difference (use it) -I use an AeroPress with a funnel on top to pour the tea through into a container, then squish the mush with the press to get every little drop -candy oils and food coloring are the way to go over jello โ otherwise youโre just making jello, which is fine โ but not what weโre going for -if possible, use fresh wet mush for the tea
Storage im still figuring out. If you vac seal them theyโll squish so thatโs a no no. Iโve had them โleakโ in glass jars over time in the fridge. The freezer seems the way. Works well for tea so should be fine for them (theyโre basically tea). Soooo, I think itโs a mix of two things for ideal storage, *a proper cure*, and then glass to avoid squishing and into the freezer. The cure part Iโm dialing in. That tray is just sitting in my dehydrator right now air curing (itโs off). I might pop it on the lowest setting while babysitting it for an hour or two. Once I think theyโre cured Iโll roll them in sugar or citric acid/sugar.
