How did my sterilised grain get contaminated?

I have just opened some of my sterilised jars only to find half of them had green mould contamination on the top of the grain. I usually soak my grain overnight and rinse it through until the water is clear. I then gently heat it on the stove until its hot but not boiling or even simmering, its just has steam gently coming off of it. I leave this for around two hours. I then drain it and dry it in a collapsable mesh dryer that I hang up, it works very well indeed. Once I am happy the grain is dry I then load it into my jars about 2/3 full. I then screw the lids on which have a 3mm hole in the top then I wrap the lids in foil. I stack them into the Pressure Canner and keep them in there for 90 mins at 15psi after venting it for 10 mins etc. Once complete I remove the jars and the foil and I do not keep the little hole covered in the lid after, the reason being the grain has a little moisture in the jar and I need it to be able to escape. Is this where I have gone wrong? If so, what do you guys do with your grain once pressure canned? Any tips for reducing my contamination would be appreciated 👍🏻

So you just have a hole? No filter media? CN you see how that's a problem?

Well I thought as the hole was so small nothing would get in. Besides I wanted the excess moisture from the canning process to leave the jars and I was not convinced even with micropore tape on that hole it would be enough to remove it.

Trust the micropore or poly next time. As long as you don’t have too much applied or shoved in the hole it will release the excess moisture. Shake the jars or bags occasionally while they are cooling and the moisture evaporates. If I don’t shake or mix I have wet grain at the bottom(sometimes).

As pc'd jars cool they suck air in so no filter material would just result in contamination.

I guess if the moisture is just a little it will be managable, Bettered to cover that hole. Mine are poly filled

Cultivation would be damn easy if that works  If you just have micropore tape, i´d recommend using 3 layers, one layer upside lid, one layer downside, so they meet at the hole. Another layer after pc cycle, upside of course.
Foil just big enough to cover the lid and fold over the rim. Don´t let it hang down too long as it could suck in water from raging boil.
If you prep your grains properly they shouldn´t have excessive moisture after the cycle. Shake to distribute moisture after you unload the jars from pc.
