Lions mane substrate colonization time

A week ago I went from grain spawn to bulk wood lovers substrate. Starting to notice whispy fine greyish white mycelium colonizing. Do I let whole bag colonize before cutting a hole to fruit? I've seen some of those all in one lions mane bags before that only look semi colonized and able to be cut open right upon purchase

Lions mane mycelium can be hard to see so a lot of people wait way too long to cut them open. They are usually ready in 10 to 12 days

Ive waited to long and had small fruits all on the top of the substrate. Now i didnt wrap the bag and just cut some holes in the bag. the fruits are looking nice but i dont think that they will be very big at the end

I usually let mine max 14 days in incubation at 21°C - 70°F.
I also tried leaving them longer to obtain a completely white bag. Each time, they started to pin before getting white. :laugh:
Once in fruiting room, the myc sometime consolidate but never be like an oyster bloc.

For fruiting, you can topfruit you will get a multitude of smaller mushroom but they will not be as thick as side fruit.
If it start pinning, you can also open the top of the bag and (with clean hands) remove pins. Then fold the bag and cut a hole on the side. My best results came out of a very small cut about 1 to 1.5 inch. Like the myc put all his energy in one fruitbody and a nice big furry ball of 2 pound came out haha

Without starting a completely new thread, I'm also wondering how long lions mane mycelium will last in the fridge on agar? Thinking of doing a small scale lions mane grow having maybe 8 bags going at a time, but keeping mycelium on hand on agar.
