Dried mushroom with soft-ish inner "foam"

I've grown and dried some of my first "designer" cubes, which are far thicker than the old classic cubes I've done in the past.
Upon drying to an otherwise cracker-dry state, I'm finding that the inside of the stems - and often a bit around the base of the outside of the stem - has a dense foam-like quality to it. It's not moist, but a fingernail pushed into it easily leaves an indentation. Additionally, I'm able to scratch it off, which turns it more or less to a powder.
These mushrooms were so thick that I decided to cut them lengthwise and dehydrated at 160f for about 12 hours.
I'm getting the feeling this is normal, but have never grown such chunkers before and wanted to double check to be sure a large quantity doesn't end up wasted.

yeah you're good that's just more mushroom. hollow/solid stipes are largely dependent on genetics - "designer" cultivars are frequently bred to be as dense and solid as possible.

Like crackers.
12 hours is fine for smaller shrooms in my dehydrator, YMMV but he's saying to dry longer for safety if you're unsure what you're doing exactly.
Your shroom should be cracker dry through and through.

Right on, thanks.
I've dried and stored lots of mushrooms, but never giant thick ones like this.
These snap like crackers as they're supposed to, but have an inner lining of totally dry, but scrape-able flesh.
I'll put a few back in the dehydrator tonight and see if anything hardens up further.

I've gone another 16-18 hours, and weight has dropped about .2 grams on the larger 7-8g pieces. The inner flesh texture has stayed pretty much the same, but does seem just slightly more crispy. Are you guys really running large mushrooms in the dehydrator for 4-5 days at a time? That's about what I'm thinking it'll take for these if they really aren't fully dry. Then again, I'm still partially convinced this is as dry as they're going to get, and the inner flesh is just chalky when dry.
