the quotes are all fucked up but you’re confusing my goalposts with another posters. My point is any pizza made, then cooled and reheated, is not as good as fresh out the oven. Obviously different pizza joints have different quality pizza

I think that you are comparing pizzas from the same pizzeria. And maybe others are comparing pizzas from different pizzerias. Two different things.

You're not right. Being NYC they basically design their pies around single slices. It's just the pizza culture. They tend to slighty undercook since the dough is very thin, then the crisp really hits on the reheat. The idea is that you grab it and walk. Go further North East for a solid coal fired full pizza that is great. Cheifmaster, I think on ban currently, can tell you about it. He knows pizza pretty well too.

They are “parcooked” then and reheated to a full finish. A totally different thing. I know chiefmaster, he’s an expert in all things everything. I don’t really put much stock in his opinion, he knows more about glassblowing than me.
