Then I add in the curry powder or toasted spices, stir fry some more and add a couple large chopped tomatoes with a little water. Once the tomatoes are cooked I blend it all up with a whole lot of black pepper and chili powder, a little salt and the sauce is good to go. I coat the chicken in some spices and stir fry it in ghee before adding the sauce
I used to think Indian food was all gross and gooey, until I tried fresh curries from this restaurant.
When Indian food is good, it is very, very good.

Haha of course Geo beat me to it on this one. Agreed
Mae Ploy curry has been a staple for our curry dishes at home. Though I have not tried the green (and now have to). I buy the red paste and after warming up in a pan will add coconut milk and a spoonful of…..wait for it…..
Peanut butter 
Also buy at your local Asian market and you can find it for $3-4! Don’t forget to pick up some pure sesame oil while you’re there, because that makes everything taste better

This thread has stuck in my head for the past few weeks so I got online and looked up Asian markets near me. Turns out there's half a dozen 30 mins away, in an unexpected small country city no less (where lifted trucks mean you have a big dick), so today I stopped by two of them and picked up some stock. I plan to check out the rest sometime in the future.
- Red and Massaman Curry Paste in the Mae Plow brand y'all recommended
- Madras Curry Powder which sounds yummy (curry, turmeric, chili, coriander, garlic, cumin, ginger, cinnamon, bay leaves, clove, allspice, salt)
- Roasted Chili Powder
- Dried Coriander Seeds
- Coconut Milk & Coconut Cream (love the cream for desserts)
- A big bottle of Rice Vinegar (a very mild vinegar great for quick pickles and such, as well as the usual addition to rice)
- Frozen Lemongrass! (Lemongrass in the local grocery is always turning black and brown on the ends so I was very excited to find this. Lemongrass is a great addition to homemade hummus because sometimes lemon zest is played out)
Something I learned: if the market is not in a big city with a lot of traffic then CHECK THE FRIGGIN DATES because they'll sell items that expired two years ago. It'll be discounted but do you really want it that bad?
Also, I need your input on Oyster Sauce. Does anyone have a brand they trust? There were several and I'm unfamiliar with oyster sauce and could use a good lead.

Adding thai basil gives alot of extra flavor too. See you got lemongrass that's a good one to add too.

Yes Thai Basil is dope, I love the liquorice flavor. I grew a plant last year for the first time and am looking forward to doing the same this year. I still have a little bit of it dried but it's not the same as fresh. Was using it to make Pad Kra Pao which I fell in love with at the local Thai restaurant.
One of the markets had whole heads of Black Garlic in their refrigerated section and they looked particularly attractive. Anyone have experience with this?
