I know thai kitchen is good. What do you all use?  The ones I bought recently are bland it's maesri brand and I won't be buying them again though I got 6 left to use.

I had a phase where I cooked Thai red chicken curry every week for months.
These days I make kung pao chicken a lot.

I really enjoy a premade curry paste but haven't tried many.  This brand is in my local grocery and is a nice price.  I usually like the green one



I recently used it to marinate chicken thighs using this recipe and holy smokes it was awesome!  I sauteed em in a pan on the stove but the grill would have been superb

With any of the pre made ones you have to add a bunch of stuff to them, for thai curry's it's usually oyster sauce, fish sauce, a little coconut sugar and some dried chilis that take it to the next level. For indian curries you need to stir fry some ginger and garlic puree with chilis then toast some curry powder in the mix before adding the sauce, otherwise it usually just tastes like a weird tomato sauce to me.

I don't make curries all that often (although I do eat a lot of green curries prepared elsewhere!), and this Mae Ploy green curry is rich and spicy, rarely requiring adjunct.

I don't like curry paste that much, I like fresh curry. They are all very good except butter chicken.  A lot of people like butter chicken but I don't.

That recipe sounds yummy.  Yea I've used that Blue Dragon curry, it's good.

Although I said in an earlier comment that I'm a basic white boy and all curries are good, I should add that I don't just simply add the curry and call it a day.  I always add garlic and/or onion, jalepeรฑo, and a habanero pepper.  I like it really spicy!

I love fresh/home made thai curry but the base takes me hours to make, and involves stopping at multiple grocery stores to get all the obscure ingredients I need. The taste is awesome but to me it's not different enough than just buying the paste

Then I add in the curry powder or toasted spices, stir fry some more and add a couple large chopped tomatoes with a little water. Once the tomatoes are cooked I blend it all up with a whole lot of black pepper and chili powder, a little salt and the sauce is good to go. I coat the chicken in some spices and stir fry it in ghee before adding the sauce

I got really high on lsd a few months ago. Tried to make chilli with tomatoes from my garden. While I was listening to the grateful dead

Instead I accidentally made Indian food and it turned out amazing. All I did was throw a can of coconut cream in it after I figured out what I was even doing

For a while I didn't even know what I was making. There was no way in hell this was chilli anymore so i was thinking:dudewtf:

Was just laughing playing in my kitchen. kept throwing stuff in it and i didn't know what this meal was anymore having the best time of my life ever

A hand full of trips I gravitated to be in my kitchen. One time I couldn't even get out of there because it was just so awesome that I couldn't leave.

It was seriously amazing curry after. I simmerd it all day into the night. Had even more stuff in it then the photo

Hell yeah Purple Sunset I have definitely ended up in the kitchen when I was on one.

Other times I've opened the fridge and thought the whole thing was preposterous! Like why the fuck do I have obscure mustard and who could fathom needing three types of miso paste but damn Ima get me some of that pineapple later :rofldrunk:

Haha of course Geo beat me to it on this one. Agreed

Mae Ploy curry has been a staple for our curry dishes at home. Though I have not tried the green (and now have to). I buy the red paste and after warming up in a pan will add coconut milk and a spoonful ofโ€ฆ..wait for itโ€ฆ..

Peanut butter :grin:


Also buy at your local Asian market and you can find it for $3-4! Donโ€™t forget to pick up some pure sesame oil while youโ€™re there, because that makes everything taste better :smile:

This thread has stuck in my head for the past few weeks so I got online and looked up Asian markets near me.  Turns out there's half a dozen 30 mins away, in an unexpected small country city no less (where lifted trucks mean you have a big dick), so today I stopped by two of them and picked up some stock.  I plan to check out the rest sometime in the future.

  • Red and Massaman Curry Paste in the Mae Plow brand y'all recommended
  • Madras Curry Powder which sounds yummy (curry, turmeric, chili, coriander, garlic, cumin, ginger, cinnamon, bay leaves, clove, allspice, salt)
  • Roasted Chili Powder
  • Dried Coriander Seeds
  • Coconut Milk & Coconut Cream (love the cream for desserts)
  • A big bottle of Rice Vinegar (a very mild vinegar great for quick pickles and such, as well as the usual addition to rice)
  • Frozen Lemongrass! (Lemongrass in the local grocery is always turning black and brown on the ends so I was very excited to find this.  Lemongrass is a great addition to homemade hummus because sometimes lemon zest is played out)


Something I learned: if the market is not in a big city with a lot of traffic then CHECK THE FRIGGIN DATES because they'll sell items that expired two years ago.  It'll be discounted but do you really want it that bad?

Also, I need your input on Oyster Sauce.  Does anyone have a brand they trust?  There were several and I'm unfamiliar with oyster sauce and could use a good lead.

Adding thai basil gives alot of extra flavor too. See you got lemongrass that's a good one to add too.

Yes Thai Basil is dope, I love the liquorice flavor. I grew a plant last year for the first time and am looking forward to doing the same this year.  I still have a little bit of it dried but it's not the same as fresh.  Was using it to make Pad Kra Pao which I fell in love with at the local Thai restaurant.

One of the markets had whole heads of Black Garlic in their refrigerated section and they looked particularly attractive.  Anyone have experience with this?
