I rather like crickets. I have had them a few ways. I bought a big box of sour cream and onion crickets. I have 25 kids or so on my corner for the bus stop each morning. It's a lot of fun to see who will eat a cricket and who wont.
Probably my favorite exotic food is tripe, but I like sweetbread too. That said, exotic and weird foods generally speaking have a pretty niche area to fill. Obvious because it's obvious. If I want to make something nice that is semi exotic, I do oxtail or salmon lox. Real salmon lox, not smoked salmon. Though I like to smoke various meats, Salmon included. It helps that my one really good friend makes great homemade bagels. The salmon Lox destroys on that. Real salmon lox is salt cured raw fish, it generally is not sold in many countries. Very tasty and tender, a lot like sashimi but salty.

Considering what snakes eat, it should be disturbing how fresh and clean the meat tastes, compared to what is under the butcher counter.
I was trying to make mine more fun for a first timer, so had it on pizza.
I was allowed to overhear alot of different game meats being improvised into typical American food when I grew up, without the knowledge of my younger siblings.
But, my younger friend was tormented by the sights and sound of the snake being cleaned (which also got the police called on us.)

Just remembered another one: In Hawaii, theres a traditional food called Lau'Lau. By far my favorite exotic food. I highly recommend it! JonBong knows what Im talking about 🤙

Its kinda like a wet, steamy seaweed pork salad, but it doesnt contain seaweed. It does have pork thou. Its simply amazing.

Not really all that exotic but not overly common in the states. Chicken foot soup, akee and salt fish, raw urchin, jack fruit, and curry goat.

Was travelling in sub-Saharan Africa and ran out of food and water. I had a bag of cola nuts, so visited a 'village' (a dozen or so mud and grass huts) and used sign language to make a deal - nuts for food and something potable to drink.
I sat in a circle with a group of locals who produced a large plastic plate heaped with boiled millet, peanut sauce and a couple of strange egg shaped lumps. We all started to eat from the same plate, using our right hands to scoop mouthfuls.
The millet was absolutely vile, having been simply boiled in some water before being covered in ground-up boiled peanuts. It was like eating mouthfulls of grit.
I avoided the egg shaped lumps because they were sort of translucent greeny brown, with vein like structures, and I thought they were the bollocks from one of the scraggy goats wandering around.
Unfortunately, I was 'guest of honour' and the village Head pushed one towards me as a special treat. I picked it up and decided to swallow it as quickly as possible in the hope that I wouldn't cause offence by gagging.
I was so, so relieved when I concluded that it was some sort of tomato or similar vegetable product. It tasted bitter, but I got it down and everyone seemed pleased that I 'liked' it.
Was the meal exotic? The definition of exotic is "characteristic of a distant foreign country", so I think so, but wouldn't want to try it again!

I've had sea cucumber and thousand year old eggs.
I try many new things. I do not recommend them all.
Sea cucumber makes sense, in that it's mostly connective tissue, which, in time, dissolves in broth. What you see is what you get.
The thousand year old eggs were so full of ammonia that it was sharp in my nostrils. I can think of means of preservation that would be less taxing on my organs.
