That looks like Lactarius rubidus.

How’s the smell?

That's what I thought. I tried nibbling a different one collected and it was spicy. So much be lactarius subviscidus. Right?

Thing is I dried them and it's no where as strong as people describe. I have to take a handful and smell them there is definitely a maple syrup smell.

I must have gotten different mushrooms growing together.

Unless subviscidus can smell of maple syrup slightly too?

Or maybe there rubidus mixed in just weak aroma..

It's my first time trying for candy caps and I've collected from 3 different distant locations trying to figure this out.

Definitely could be a couple different species.

L. rubidus shouldn’t really feel viscid even when wet.
The dry orange peal type texture is what your looking for.

From mykoweb:

Lactarius subviscidus can be distinguished by a dark orange, orange-red to orange-brown, viscid to subviscid cap, white latex that very slowly turns white paper yellow, an acrid taste, and association with Sitka spruce in coastal forests.

It should also have a more watery/translucent latex, this looks plain white.
