Hey guys, first post on this side of the site.
I've always had an infinity for the outdoors unfortunately haven't grown up with the influences or know how to do it myself. I've now reached a point in my adult life where I just really want to get out there and make it happen however I don't feel confident because I don't have any knowledge about me.
Maybe some of you guys could point me in the right direction, what skills have aided you greatly.
I am interested in backpacking, fishing, general survival stuff. I've got a dream of packing a kayak and following the coast for a few days, catching my dinner when I can and just camping in any bay I come across. I know I probably make all of this more complicated in my mind then it needs to be but hey I'm a noob.

i think the best way is to start small and easy, and gradually build a skillset over time. just get out there and try shit!
go on a few camping hikes with 1 extra task like 'im gonna build a fire' or 'im gonna catch a fish'. you only need to bring the extra tools for that one task, and you can focus on it to learn the basics
it sounds lame but for real, learn to be prepared. figure out what could go wrong, and plan for what to do if it does. its better to be overprepared than under if you get caught in a bad situation. the more you get out there, the more you learn about what you actually want to do, how to do it, and what you need to be prepared to do it
Don't rush to buy shit becuase its shiny. Theres a lot of 'things i wish i hadn't wasted my money on' posts on the internet, read a few of them before buying anything. If you actually need the thing, you can usually find a good deal on quality equipment if you look around. For example, right now is a good time to get a used tent as people settle in for winter and dont need them anymore.
Books and Youtube are your friend. Don't limit yourself to 1 source of information. All general survival books are basically the same, but you could maybe find one thats tailored to the area and terrain you are exploring. Read through them and start learning the skills that sounds most fun to you. Youtube is great to get a visual idea of what you should be doing.
live your dreams my dude

YouTube is really your friend for this if you don't have someone nearby to teach. Avoid Tubers that do tons of gear reviews because that just confuses what you really need with what they want you to buy.
As previous poster said, just start by doing small stuff. Build up. Learn what you really like by doing it. Don't plan some huge trip without trying things at a pace that is enjoyable and where you can bail if you find yourself unprepared.
Know property and privacy laws especially if you plan to randomly camp places. Some undeveloped coast is privately owned and you could be trespassing. Likewise, you might be venturing into a park or preserve where you could be upsetting a wilderness management effort and face civil penalties for doing so.
Oh yeah, avoid trivial survival gimmicks or douchey bespoke camping box of the month scams. You'll end up buying way more than you need. Buy only what you know how to use or will realistically learn how to use very soon.

I'd highly recommend starting with learning the trees, shrubs, and plants of the area you live in or intend to spend time in. Knowing the local flora is pretty much the key to being able to read the area you'e in.

What Mr. Piggy said.
I would recommend getting a Botany book specific to your region. Learning about all the plants, shrubs and trees in your local area will help you find edible plants, track animals and even help with picking edible fungi. Also, might as well buy a book on hunting edible and medicinal mushrooms specific to your local region.
And watching YT survivorists is also an excellent use of time. Find one you like and check out their video collection.

Fishing is a lot of fun. Your first good catch will have you "hooked". And if you enjoy eating fish, there is nothing like fresh fish.

I wish I learned about tarp shelters way earlier than I did. There's a plethora of different designs / pitches for every situation. It's small in volume, very lightweight and fast to setup.
I would highly recommend the DD 3 x 3 or DD superlite tarp series.
Also echoing what others have said don't go to crazy with purchasing gear but when you do I've never gone wrong with the buy once cry once philosophy

When it comes to learning plants and finding land ownership todays apps are awesome. Would have loved that stuff when I was young. ONXhunt is what I use for land ownership. Lots of apps for plants and mushrooms out there. For rocks you can google the geology of your area while you are standing on the outcrop. The knowledge easily available is incredible these days.

Gaia Maps gives you the same features as onX covering the entire united states for what one state costs with onX.
