First time harvesting these so looking for advice as to when they're too old to bother with. Which of these would you consider too old to mess with:

I'd think it would be like any mushroom you intend to consume....
If it's mushy, moldy or stinky throw it out...
-------------------- Disclaimer - I'm just a hobbyist and cannot absolutely guarantee any ID offered. I'm most familiar with the species found in the Pacific Northwest - those found in other parts of the world may vary considerably, so always do your own research to find out what grows in your area and what lookalikes you need to be aware of. Understand that many mushroom species cannot be 100% reliably identified by photographs alone, even by an expert, so it may not be possible to go beyond suggesting a probable genus.

Bottom left looks too far gone. The rest looks OK.

Sometimes I would just clip the stem off of a manky mushroom and keep that and toss the cap. A lot of times the stem can be perfectly fine while the cap is fucked. Especially if it’s a beefy mushroom.

They all look fine to me. They aren't funky, the dark color is spores dropping from the mushrooms above them. The one on the bottom left is shredded, beat up, just starting to get funky but it's still good. I wouldn't eat it fresh though. Dry it out or make tea. Or plant it somewhere if you have more than enough and can high grade them.
When it doubt dry it out. Drying will kill any worms, gnats, mushroom fleas, or whatever other pests could be living in them. When mushrooms go bad they turn greyish black and get slimy.
When you find a big patch you'll have a lower layer growing up below the top layer. They'll turn completely black but that's from being covered in spores not from going bad. Takes experience to tell the difference.
I agree with the poster above, the caps often get funky before the stalks.

Agree, probably still OK for drying. I take the not so good looking ones and keep them in a "B grade" bag which I use for tea. The stem looks alright.

I found some completely black caps today — not from spores but from drying out and being exposed to the elements. Notice the three black caps on the left right next to the concrete:

Will definitely dehydrate these and use for tincture or tea… or “Psychedelic Jerky”

If it’s mushy then it’s going bad. If it’s dark blue/black and solid it’s either waterlogged and/or frost damage but probably fine.

More than likely frost damage since we just had a cold snap.

Yeah, mushy = no good, but frost damage doesn’t seem so bad.
The blackened ones dehydrated well, still have plenty of structure:

I would personally not consume those. To each their own.

They're fine. Lost some potency, but I'd make tea of them.
