yeah, if you dunk your cakes in skim milk are poweder milk and place in the fridge fro 12 to 24 hours would be enough. you will get a massive pinning this way. When I do it I always get at least 50+ pins.

I never recommend the fridge. To much mold in there to begin with unless you have a dedicated fridge for mushroom growing.
I usually recommend either keeping them by an open window at night, or take some 2Lt. pepsi bottles, fill with water, freeze, place those on top of the tank. A good 12 hours on/12 hours off is a good cold shock cycle.
Personally I find the natural temps drops at night is enough. Except in the hot summer months. Then the ice trick and turning down the a/c is needed :)
