Suggestions for new Gourmet setup?

Hey everyone, long time no see!
Finally decided to start a legal gourmet mushroom business. Its been years since I grown cubes, and figured this would be a good route instead of my dead end 9 to 5.
Ive settled on growing - King Oysters - Golden Oysters - Shiitake Mushrooms - Lions Mane
I am planning on using hardwood chips, sawdust, spawn, and bran. Would that be an ideal substrate, or is there a better option? Should I add gypsum aswell?
As far as pasteurizing/sterilizing, when I grew cubes I used a oven tek to pasteurize bulk amounts.
I would like to use oven bags to create blocks. I have read that with bran it must be sterilized. How true is this? What would be the best way to pasteurize/sterilize? Could I use an oven tek?
Id like to process bulk sub without investing in large startup for abunch of huge pc's or an auto clave. Im doing this out of my tiny home with little room so trying to keep things sort of compact.

Pretty sure bran always needs to be sterilized.
Do you plan to purchase spawn or make your own? If make your own, then you need to have a way to sterilize.
I haven't seen anyone talk about using the oven in years, I'm assuming there are better options for you. Maybe a presto pressure cooker is your best budget option for sterilizing. If you have a stovetop or can purchase an outdoor propane burner.
If you don't want to invest in any equipment you might be better off going a route that doesn't sterilize. Such as pasteurized straw or sawdust.
Do you have room and access to any outdoors space or are you limited to what you can do indoors in your tiny house?
Also curious where do you plan on storing and fruiting these blocks?

Use filter patch bags not oven bags.
Most profitable substrate is 50:50 soybean hulls and wood pellets.
Super pasteurize in a steamer. Easy to build and you can run them anywhere.
Have you thought about how many mushrooms you need to sell in order to leave your job?
Where will you store them before delivering or market?
