Any espresso nerds?

Anybody on here into espresso brewing? What machines are you using? What’s your favorite beans? Brew ratios etc? Super easy to nerd out on all the details.

Espresso has become my daily ritual, more or less. I posted my coffee musings a few months ago, in fact...

For a high quality, easy to use espresso machine with an auto-steamer for your milk, I can personally vouch for the Breville Bambino Plus, which I have used in my home to pull over 1,600 double shots so far (I know the number because it requests a cleaning cycle every 200 pulls). If you really want to master latte art and all that, you probably want to instead opt for a manual steaming option, but I don't care so much about that aspect of the ritual, and often enough, the milk quality is good enough off the auto-steamer to make some art (although it is less consistent than learning how to manually steam your own).
I've recently been getting a kick out of anaerobically fermented and lactic process beans. I don't have any widely available brands to recommend, but my local roaster over at Forge Coffee carries them on occasion and they are particularly good for drinking without milk or sugar adjuncts, as their flavor offers a unique depth and tartness that would otherwise be masked by the additional adornments.
I also quite like this Kenyan peaberry from Noble Coffee Roasting, one of my sisters lived next to the founder of Noble when he started roasting in his garage and delivering limited quantities of beans to local restaurants. He's a perfectionist and his roast profiles are about as good as they get.

Oh nice man! Just figuring out dialing in on the gaggia evo. Started playing with precision baskets and went down a rabbit hole. Still looking for that perfect grind size.

Yeah, I'm not quite to THAT level of extreme attention. But I do have a variable burr grinder that I haphazardly adjust as needed for very different beans. I've even done some home roasting with a friend in a toaster-oven style device with a rotating drum way back when. Roasts turned out acceptable, although very small batch and a bit more trouble than it was worth. We had delusions of starting an actual roasting outfit, for which I even wrote a business plan, but as is often the case, life got in the way of that particular dream.

On the grinder, I use an older model of the Baratza Encore. I had to buy a replacement plastic ring for it after several years of daily use. I was glad they made it! It has small plastic tabs designed to break if anything too hard attempts to pass through the grinder, apparently in efforts to save the grinding mechanism from further damage. My grinds were all fucked up for a week or two before I figured out the problem. Fortunately, the company does sell replacement parts, and it's working as well as it ever did!

Been experimenting with some different single origin from Costa Rica and Jamaica high elevations and loving the super unique cocoa like taste/texture.
