VACUUM SEALING INFO FROM THE SOURCE 1

I emailed Tilia a few weeks ago when we were discussing vacuum sealing shrooms and i just now got the response, not that i didn't trust all you dudes out there. but, because it said on the food saver site that you should never vacuum seal mushrooms, period. so i asked them if they were talking about dry or wet shrooms, or both.??
here is what food saver said:
Thank you for contacting Tilia Direct, Inc.
We apologize for the delay in our response to your email inquiry.
We do not recommend vacuum packaging mushrooms because they are a fungus. Fungus will continue to develop even when air is not present and botulism will develop.
Fully cooked mushrooms can be vacuum packaged. This would include saut?ed mushrooms or mushrooms cooked in sauces. The cooking stops the natural development of the fungus.
You may also vacuum packaged completely de-hydrated mushrooms. It is important that the mushrooms are fully dried prior to packaging.
so as you can see we were correct in our thinking that cracker dry shrooms could be vacuum sealed, and i like the line about mushrooms being a fungus, thanks.
hope this helps.

Welcome to the Shroomery!
You'll notice that this post is originally from when I was a teenager -- and I'm now old. If possible, try not to resurrect the dead -- it's usually just ugly and best left to Mr. King. In any case -- happy shrooming!
The person you thanked hasn't been here since 2005 .
