Why are the gills up like this?

Needs a little more FAE. still edible and yummy though....

Look like they're ready to harvest.

Yeah, I agree with deadmandave. Nothing wrong, they just curl up on the edges when they are mature.

I like to harvest before this happens, but they're still perfectly good.

Especially noting, on your pic, the look towards the front and that one in the far back how curled up they are.. I only see that bad when the FAE is not perfect. Such as the exhaust is perfect if a circulation fan is turning but there is no circulation fan going.... which is exactly why I had all these clusters go up like that  in the pic below

Normally with the FAE just right I will get all clusters to look like this one below and better.. Though the one below I was tweaking the humidity so the edges were too thin..

What I have discovered is the curl up like you were asking about in your pic, happens when the FAE is on the border of perfect and well it can work but they will curl up and not look perfect. And sometimes on a 2nd flush because the bag edge flaps around the base of the cluster are up and thus keeping a little more CO2 near the cluster on the 2nd go around.

When I have the FAE and humidity dialed in perfect.. all I will see from every cluster every time.. every flush.. week after week, month after month.... is like the pic below...

Can you please elaborate on your findings regarding humidity and cap formations?

Sure. For me when running the exhaust and circulation fans in an FC but my humidity reads an OK RH, if the misters or fogger does not turn on that much during the day, then the caps will become thin and the edges very thin and will crack and break very easily either before or after picking. They will also often get on the very edges a thin brown ring depending on how dry they are. They will NOT last long looking nice after picking either. On the opposite side of this, if running the mushrooms in an open room or outside and the humidity is an OK RH with some misting once or twice a day but NO fans and exhaust, the edges will be thicker and stronger and what I would consider normal.

How I discovered this is when it rains the RH in the FC goes up and doesn't swing up and down so the fog wouldn't turn on as much. It was ruining my crops. The mushrooms need a certain amount of water droplets to drop on them when they are in a "windy" environment such as a dialed in FC. Even in a non windy environment this is true. They just don't need as much water droplets as a windier environment.

This is why I run a cycle timer now for my fogger instead of an inkbird.

Thank you seagu. It has been very rainy spring and summer here so I noticed the same thing in my FC, fogger wouldn't turn on that often and I got dried yellowed fruitbodies. So I switched from Inkbird (or actually a combo of Inbkird + cycle timer) to a cycle timer as well. But I never noticed the thin cap rims. Might be that I didn't know to look for them or I thought it was something else as that time there was a lot of changes. But yeah, for sure I've seen caps like that in my FC at some point. Good to know it was that.
