How is grass grown underwater? * 1

So I know the easy grass germination method of soaking grass (12hrs -3 days) then drying it out, and letting it germinate. This is how they make malt.

But I am becomming curious about methods, if there are any, that might achieve germination completely submerged.

Most grains die in just a few days of submerging in water. I read however that rice is able to germinate underwater - that traditional rice farmers germinate it in a bog. How do they achieve this? I thought most any grass would just drown after a few days soaked in water. Is it because it is planted in underwater soil? Could rice grow (and survive) in a bag, submerged?

My research suggests even those sprouting rice in a bag drain the grains. So why is it rice can grow in a water-soaked bog in nature, but not in an invitro setting? Perhaps the grain doesn't drown if in soil underwater. I would like to learn more about how rice is planted exactly, the videos I've been watching aren't really giving me the neccesary details to understand traditional rice farming really.

Not to mention, there are many other grasses like reeds and sedges that can make an entire lifecycle underwater, how is this achieved if the seed has a tendency to drown?

To better understand these phenomenon, I will perform an experiment to ascertain whether grains can grow in water.

EXPERIMENT: Testing a variety of grains - especially those known to grow in water - by putting them in a bag with a water level that does not completely soak them, but keeps them consistently moist. I will try japanese millet - it can be flooded when it is mature, though it isn't typically grown in water, yet it can grow in bogs. I will try to locate rice seed and try it with rice seed too.

So imagine, a grain where only 1/4 is submerged in water. I want to see if it can constantly uptake that water, but not die, to study the influence of water on grain germination.

As to the purpose of this experiment: standard methods of germinating grains require careful attention to moisture, sometimes specialized equipment. Or, home diy methods like rinsing and draining the grains twice a day, are labor-intensive. If a method could be discovered to just add a certain amount of water and grains and no more, no work required, it would be infinitely less complicated than the methods currently available for germinating grains.

A later experiment could try to simulate a rice bog in an invitro setting - a jar with wet, water-logged soil - and see how grass is able to grow in that setting. That will have to be an experiment for a later time.
