Pf Tek, jars no good?

So I pressure cooked these last night. My first worry is that I didn't pack enough in there. I know it's supposed to be fluffy but I may have left it a bit too fluffy. Then I'm thinking water got in during the pressure cooking? I pressed the foil to the jar and cap as best I could. Not really sure what I could have done different from that aspect

For me fluffyness is no big deal, if you think water got in your jars, then maybe you had to much water in your PC. Or to much foil, which can suck up water when the jars cool in your pot

Well I guess it's a moot point at this point cause I went ahead and inoculated anyways. Probably wasted $24 but oh well lol. I'll learn from it for the next one

Water will get inside the jars no matter what you do. Its just the nature of sterilization. You wanna prevent air getting sucked in there, which can only be prevented by letting the PC cool down to room temp before opening. Still, this does little to affect contamination. Most people just take their shit out of the hot PC with no problems.
You want the substrate to be as fluffy as possible actually. If you pack the substrate into the jar with force then the myc will grow extremely slowly and will probably go moldy.
You will see droplets of water form on the glass because of condensation. when the cake cools down, the glass (outside) will get cooler faster than the substrate. (inside) This causes water to basically stick to the glass. The water doesent evaporate because there is barely any air exchange inside the jar. Nothing to worry about. It happens nearly every single time.
You should only worry if you get droplets of water AFTER inoculation that werent there before. This means that there is some aerobic (air breathing) bacteria growing in there

The problem with sucking water into PFtek jars is that the dry verm layer will no longer work to protect the contents and the mixture will no longer have the correct moisture content to colonize.
The purpose of the foil is to keep water from collecting on top of the jar lid and then dripping in the holes so all teh foil needs to cover is the lid/threads. Using too much foil and tightly wrapping it down the sides of the jar will wick the water into the jars if any boiling water makes contact with the bottom of the foil.

Well that's what I gotta do next time then. I definitely used more foil than needed. I'll just pray for these 8 jars lol
