Sloooooooowwwww colonization

Hi guys... so I had 6 jars and 1 of the 6 I lost to some type of bacterial contamination. I decided to attempt with the other 5 in 2 shoe boxes. These boxes are a week old now and I have barely seen any progress at all. This is my 4th grow and didn't have any issues getting fruits with the others and nothing in process has changed other than I used coir bricks this time instead of the previous bag of semi hydrated coir I was using (made it difficult to get field capacity)... Temps staying a steady 71-75 degrees. 12-14 hrs of natural sunlight. Any ideas?

The coir surface looks a little dry to me. If it is, then give it a good misting and just leave the tub alone for another week or so. It can take a couple of weeks before you see much happening. So long as there isn't too much air then I don't see anything to worry about yet, although contamination can slow down colonization. It can also though cause the mycelium to start pinning comparatively early.
I would say then, TLDR: to give the surface a good mist, put the lid on the tub (so long as it's not airtight), give it a week and then update your post.

Thank you! Will do... something I've realized when misting is that I'm not sure what water to use. I boiled tap water then let cool and put into a spray bottle for other grows and seemed to pause any growth. What water should I use?

Tap water always seems to work well for me. Keep it simple.

If you gave the surface a good misting, then it's enough if you put the lid on. As for water, tap water is fine, though you may want to change the water in your mister every few days, just to be on the safe side. Once you've spawned to bulk, sterile technique is over with, though obviously you don't want to be spraying anything microbial on your substrate.

Did using only 2.5 jars per box through the ratio off enough to slow this down a bit?

Not sure since you have never stated how big your jars are, but 1 quart of spawn per 6qt shoebox is the standard for most people. If you lost a jar to bacteria, the odds are the rest were somewhat contaminated and likely didn't recover after being broken up and mixed with substrate.
That substrate look extremely thin and will likely have moisture retention issues *IF* the mycelium recovers. I wouldn't hold your breath waiting for a decent flush though - start a new project while you wait for this one to do whatever it will.

Well.. we have some fruits. May not end up a huge flush but fruits are fruits...

Already have some Nat jars going... so I'm happy with anything these produce.
