Hello,
I did a quick search and couldn't find any information on this unit in the cultivation forum. I bought one about 3 months ago and have been using it to sterilize grains, agar, and liquid culture, as well as to can food. So far I have had almost complete success so I'd like to share some of my thoughts. I am by no means an expert in home mycology, however, I worked for many, many years as an environmental and biochemist so I am well versed in the use of lab equipment as well as sterile technique. With that said, here are my thoughts on the unit.



First off, since it is a confusing product line, I'm going to mention that this unit (Presto Precise® Digital Pressure Canner) is a dedicated canner. According to their website, it is the first "digital" pressure cooker to meet USDA home canning guidelines for meats, poultry, fish, vegetables, and other low acid foods. This means that the cooker (although it does not have an external pressure gauge) must be capable of holding a pressure of at least 15 PSI. It has a digital display which is used to select from pressure or water bath (for pickles and jam, etc.), program the cycle, as well as the status of the unit throughout the run. This unit is different from their other electric canner/cookers in that it is designed for pressure canning.



The unit has a programmable pressure can setting which can be programmed to run from 1 minute to 3 hours. Once the unit has completed the vent cycle and the weight has been placed on the vent, and the unit reaches pressure the time will begin counting down and the unit will shut down automatically when the canning cycle is complete. This allows me to start the unit before bed and have sterilized grain jars in the morning when I wake up.

So far I have tried many different types of jars and in my experience if it fits it will work just fine. It'll hold 10 half-pints, 8 pints, or 5  quarts (all regular mouth), which has been plenty for my needs. It also fits a 500mL erlenmeyer flask, however, it needs to be tipped slightly to close the lid. So far I have ran 3-4 agar bottles, no-pour agar dishes, as well as rye and WBS in 1/2 pints, pints, and quart sized jars. Each grain run was batched with a control jar which was not opened/inoculated after sterilization and so far none of the control jars have developed any visible signs of contamination.

As far as safety goes, this cooker has a bunch of safety features built in. The unit can monitor the pressure inside the cooker very well and if it will give warning messages if the unit can't reach pressure. It will also automatically shut off if anything is wrong (low pressure, ran dry, etc.). This gives me lots of peace of mind when I'm heating a large pressure vessel full of glass in my kitchen. Like I said before, I have taken to starting grain prep and loading the unit before bedtime.

I have been using this unit almost once a week for months now and so far I really like how convenient it is to use. I feel like it is safer to leave unattended than a stovetop unit, which is a major convenience when cooking jars for 90-120 minutes. It also has safety features built in which make me feel more relaxed when using it. The main downside is how long it takes to warm up the unit (from cold to venting), which seems to be 25-50% longer than stovetop units I have used in the past. However, since I can walk away for the rest of the canning time, I feel like it saves me "active" time when I'm monitoring the unit.

Now, you may have seen that I said "almost complete success" before and I have. The second time I used the canner I had an unknown error message sometime during the cook time which caused the canner to shut-off before the 120 minute cook time was finished. I had already gone to sleep when it shut off, so I don't know why it faulted. My guess is that the gasket was not seated properly, causing the unit to leak steam and fault. I see this as user error, and something that could happen to a non-electric unit. I have not had this happen since, so far so good.

Pros:
easy to use
set and forget
safety features
efficient
easy to clean non-stick interior (didn't know how much I wanted this)

Cons:
slower than stovetop
more expensive
not useful as pressure cooker (for cooking)

Does anyone else use one of these?

The other big con of those is the volume. You are shelling out $300 for a 10 quart PC.

I like the idea of them, they are simple, but are not worth the $ due to the lack of volume.

I love my 23qrt Presto, it can handle enough jars for two monotubs...

I thought I might try to resurrect this post because its the only information I could find about using the presto digital for grain.

I arrived at the presto digital after using the Instant Pot for 3-4 months.

I was using my instant pot to run 3 wide mouth quart jars of oats for 3 hours.  It worked OK.  I would load the jars in the morning, run the IP, go to work, and that night the jars would be cool and ready to inoculate .  I did, however, run into some contamination every now and then, (likely due to the IP’s low pressure rating)  Normally wouldn’t be an issue, but because I was making so few jars, it really limited what I could produce.

Fast forward to now, I can put 5 quarts of grain in the presto digital, bring it to pressure and go to sleep knowing my grain was cooked at 15 psi without having to watch over it.  I have no problem leaving it unattended because its designed to turn off if anything goes wrong.

I dropped $300 on the presto digital and so far it feels worth it.  I save so much time not having to babysit my PC.  I was going to spend about the same on a presto 23 + quality hot plate so for me its a worthwhile trade off.  Keep in mind, I got this for GRAIN.  I have never sterilized substrate in it.  Maybe I could fit 2 blocks?

I’d love to hear from anyone else that uses this product.
