A lot of regular cubes won’t even pin in 11 days.
Mushroom stuff is 90% waiting.

Mycelia respond to stressful environmental changes by fruiting. Generally, if stressful conditions aren't met, they have no reason to reproduce. This process can be induced by simulating these stressful end-of-life environmental conditions, (i.e. increasing airflow, or partial dehydration.) From what you've described, it seems that you're trying to do this, however, overmisting it, essentially giving it no reason/incentive to yet expend its resources on reproducing.
With this, you must keep it moist before, and once fruiting, as it mustn't entirely dry out. Don't create a misting schedule- mist only when required. At the same time, 11 days isn't exactly a long period of time.

Stress fruiting is a last ditch effort when there’s contamination, but stress in general has nothing to do with why they fruit.

I saw your thread asking about what that was. I'm glad you asked because two of my cakes have those and I just assumed it was some sort of weird myc growth. Mine had been there for a few days before the pins started, so here's hoping you see some pin action soon!

Hey, nothing against that company..I have an unused one under my bed lol.
But buy the coco coir and the vermiculite separate. Skip the gypsum.
You'll save yourself a lot down the line
