Braised Beef Short Ribs * 8

Found some nice lookin' $50 sacks of prime short rib @ $8.99/lb from Costco this week.




It's been quite a while since I've made this particular cut, and so I figured it was about time! :yesnod:




Ingredients:
  • 8-12 short ribs (4-5 lbs), thicker/meatier the better
  • 1-2 onions
  • 2-5 carrots
  • 1-2 cups dry red wine
  • 2-3 cups beef or chicken stock
  • 2-3 tbsp tomato paste
  • Garlic cloves
  • A few sprigs each of thyme & rosemary



Chop up yer onions and carrots, and soften for a few minutes in a large pot on medium heat with a little olive oil.

Make sure your short ribs are dry, salt 'em real nice and dust with some flour if you're feelin' it.




Get the veggies outta the pot and pop the meat in on high heat to brown the edges up.




Get the meats out and toss your wine in the pot, scraping any stuck bits of fond off the bottom, and let the wine simmer for a minute or two.




Add your stock, and tomato paste, stir it up and bring it back up to temperature.




Toss the veggies and meat back in there, along with your sprigs of rosemary and thyme. 



Bring to boil and place in 350*F oven for at least 3 hours.

When it comes out, the meat will have shrunk up on the bone and be nearly falling apart.




I like to press a ladle or large spoon into the pot at this point to pull off the tremendous amount of liquid fat on top.  You can use this for other cooking duties or just cool til hardened and trash it.




Then eat.  Served here with cheese filled pasta nuggs and fresh corn cut off the cob.



Kept this iteration quite simple, but if you have any tips or tricks for special additions you like in your braised short ribs, do let 'em be known because I'm always down to improve and it's fun to experiment!

Yum.
I've been getting free meat from my grocery store job. They let us take anything that is out of date or where the packaging is compromised.
Scored 4 lbs of short ribs last week. They came from the farm with faulty seals on the vacuum packs. Cooked up a similar recipe with them.
Ingredients were the same except mine also had leeks and celery, with a splash of worcestershire sauce added to the braising liquid.
I seared the ribs in a pan. Everything else happened in the slow-cooker, instead of a pot in the oven.
Served over polenta with sauteed greens on the side

Good to know as Costco is great for bulk.  Going on a carnivore diet and high fat and protein two to one.  Will look for it next time in. 

Is so strange to feel one's stomach and gut shrink and not crave food and sweets and carbs.  But that is just something of a way of eating I am trying.  Ribs are great.  The price of meat and basically anything with inflation is worth it.

Thanks for sharing.  Have to do this on a budget.

Just sticking to Beef and no pork.  Grass fed but Costco doesn't offer it yet still good as I burn money like nothing but debts suck.  Sam's opinion and the jews makes sense to me to Pork.  I just stick to beef now. 




It is basically what they eat and what is pumped into them like antibiotics and hormones to make them fat and sell quickly I just avoid it. 

Looks like you know how to cook.  Getting used to shifting to that and is one of life's great skills.

Wow.  Eating the carnivore diet and it shrinks your fat and bones and the skeletal system is like wow.  My body is just high protein and sat. fats and a few vegatables and carbs, from beer.  Could only drink three and it felt like my gut was going to explode and I am 155 pounds and fit. 

So I slept for 8 hours and ate Quinoa and vegtables and can drink again.  God,, they aren't fucking joking.:sad:  Not fun to drink beer when the stomach is shrunk and muscle has grown and yes I work out as well.

Ribs, love them.  Going on beef right now but will go back.  Some guy posted on youtube cherry cola ribs and, what?  I DON'T normally use or drink soda pop, good choice their man.  Ribs though and Brisket done right, bliss and yes that is pork, whatever.  I was vegan forever and still trying to get off the judgemental bandwagon and I am right way of thinking and treating people.  I was very wrong though on the fence with pigs but for now am fine but sticking to beef. 

Have to give up beer.  That level of carbs after off it for a few weeks my gut didn't handle it well.  But yeah meat, quality meat, and butter and eggs. 

Wan't to get fit and lose weight with some short walks, though I go to the gym.  Do that for two weeks and see how fast your hunger goes and you may shit a lot but the body getting rid of the garbage within it. 

Noticed that quite succinctly.  Not medical advice.  Just look at the package and ingredients and see if protein and sat fat and if one can afford it grass fed and USDA no anti-biotics and feeding them shit. 

Shit works.  On with tomorrow and prepping for the PCT.  Think I will only bring quality beef jerkey on it and water and purify on the way from the streams that still run.  Not like it was 3 years ago.

Can we all just say the covid years and the endless wildfire years really fucked up any type of Summer vacation people had in the past?  And everyone has a story to outdo mine and my vacations for that time and I just listen and go, that is really shitty.:shrug:

This summer high hopes.

My mycology club is having it's annual anniversary/birthday party today. We'll go on a mushroom hunting hike, then have a pot-luck meal.
I'm making a big batch of morel braised short ribs.

Scored 6 lbs of short ribs for free at work the other day. Grass-fed, pasture-raised beef from a farm 80 miles outside the city.
~$60 worth of meat and they let me just take it home because the vacuum packs they came in were not airtight!

-Beef short ribs
-Morels (Dried, re-hydrated. Picked spring 2021)
-Shallots (Also free from work, the outer layer was a little soft on most of them, so we couldn't sell them at expensive, fancy grocery store prices.)
-Rosemary
-Stock (Homemade veg stock, I save onion scraps, carrot peels, celery bases, etc. in the freezer. Then I make and can a big batch of stock a few times a year.)
-Red wine
-Tomato paste
-Salt and pepper

Salt and pepper the meat. Sear it in a pan. Move to slow cooker.


Deglaze the pan with morel soak water. Cook the mushrooms and shallots. Put them in the slow cooker.


Delgaze the pan with wine and stock. Mix in tomato paste. Bring to a simmer.
Pour this braising liquid over the meat, shallots and morels in slow cooker, add fresh rosemary.
