Your Cooking Arsenal * 1
    #28352289 - 06/08/23 03:30 PM (7 months, 16 days ago)

One of the coolest things about cooking, is eating (of course).  But the tools of the trade are what make half of the craft as fun as it is.

However, as much as my family loves my cooking - I get A LOT of shit because of the amount of tools I have at my disposal.  Things like...

MBGF Smoker (Masterbuilt Gravity Fed)  - (With a Fireboard PID controller)
This was an upgrade from my MES30 (Electric smoker) with offset smoking tubes/trays.
Instant Pot
Stand mixer - With the grinder attachment, scale/sifter attachment, shredding/slicing attachment.
Sous Vide recirculating wand and several different sized containers.
Blackstone flat top griddle with air fryer (its why I got rid of my stand alone air fryer)
Foodsaver vac sealer.  - Although a chamber sealer is on my 'want list'

Of course there are other 'odds and ends' that I have picked up along the way, but these are my main tools that I use.

What are some of your tools that help keep you fed and full?

An old chef's knife my dad dug up when he built his garden shed.
An old soup pot my fiancee got second hand for a fiver.

We sometimes walk by one of those displays with all manner of green eggs, camado's and whatnot, and always burst out laughing. Our barbecue is made of some bits of concrete paving stones we removed because we prefer plants over pavement, two roof tiles and an old grill from an over we no longer have.

Sure, we do have some kitchen tools & implements. But when my parents gifted me some kind of fancy multifunctional mixer some time ago, I took it back to the shop and traded it for cash. We already have a mixer. Don't need two.

My fiancee insisted on getting herself a milk foamer. Fucking waste of space. At least she uses it occasionally.

What I wouldn't go without:
  • Quality chef's, paring and bread knives
  • Large wooden cutting board (thanks shLong & ythan!) and dishwasher safe synthetic board for raw meat prep
  • Stainless steel pots and pans (medium and large)
  • Non-stick fry pan for eggs
  • Non-stick double-burner flattop/griddle
  • Stainless steel & silicon tipped tongs
  • Stainless steel & silicon spatulas
  • Mixing bowls, measuring cups/spoons
  • Quarter sheet hotel pans
  • Cloth & paper towels

What I wouldn't want to go without:
  • High quality convection oven w/ ceramic perforated broiler mechanism
  • 18K BTU gas stove burners
  • Knife Sharpening stone
  • BBQ
  • Toaster oven
  • Vitamix blender
  • Stand mixer w/ meat grinder attachment
  • Espresso machine
  • Microwave
  • Microplane, grater, potato masher, peeler & mallet
  • Parchment paper, foil, plastic wrap & ziplocks

What I have but could easily live without:
  • Food processor
  • Sous vide circulator
  • Crock pot
  • Cast iron pan
  • Immersion/stick blender
  • Coasted cast iron panini press

Love these lists!  Keep em coming!

I can dig most of your musthave, wanthave, and coulddowithorwithouthave lists Geo.

Although personally I would have to rank my SV wand and stick/immersion blender higher on the list.  Sure they don't get consistent and regular use, but my life would be a sadder one without them.

My deli slicer would fall into the category of 'Eh, If I didn't have it I wouldn't cry' category.  Then again, I haven't been able to source some good pork belly in a while.

Yeah, the sous-vide thing is a novelty for me.  If I got around to incorporating the practice, I'm sure it would find its way higher on the list... but since I've had it for a decade and can count the times I've used it on one hand, it's never become an important piece of equipment for me.

Now the immersion/stick blender... I did wrestle with where to rank that one! :tongue2:

I really do like it as a convenience tool for certain soups/stews, but again, it's not used very often, and I could achieve similar results with the vitamix blender (and have) because it can handle high temp foods and always blends like a beast.  Even more stone-age, a potato masher can substitute for the immersion blender in some cases as well.

Speaking of circulating slicers aka deli slicers, I used to have one.  Bought it mostly because of my love of cured meats, in particular Spanish jamon, but soon realized that unless I got very spendy on top of the line equipment, the run of the mill slicers for the common kitchen (at least at the time I bought mine) were really pretty shitty and couldn't handle a dry cured meat sliced thin.  I gave it away not long after procuring it because it also took up a shitload of space.

One of the things not mentioned yet is a rice cooker. Super basic aroma puts in some work.

I have a bit of everything.  I'd say that I use my Instantpot the most, it's great for making hard boiled eggs.

Love this.

All of your tools in one collective place.
And agree that the IP is an amazing tool.  I just recently taught my wife how to do her own boiled peanuts in it.

Last night I (relearned) the joys of my gravity fed smoker.  It also doubles as an offset grill.  Did some jalapeno marinated thighs and they were amazing.  Love the char of charcoal fired food vs the griddle sometimes.
They both have their places.
