I've liked em all. I never beat morrowind as it was already old when I got my hands on it and I struggle with outdated engines n stuff. I have done literally *everything* in oblivion and skyrim though. Notable mention I did like ESO also just because I got to roam all the lands I read about in the game lore books but never got to see, being locked to morrowind, cyrodil and skyrim previously. It was a good mmo experience even if it wasn't a proper ES one.

I have only played 3, 4, and 5. But I think morrowind is best of those.
The combat in morrowind is terrible, but I think the interaction options are better as well as crafting.
I have have very high expectations that 6 will blow everything out of the water, it's the game I am looking most forward to in the future.

Starfield is 6/10 for now. They placed a really good structure for it. It has good bones. But god damn did they dumb down too many systems and most of the quests feel flat and unloved.
It will be an amazing game in a few years once they start dropping good DLC and the modders go nuts though.

Morrowind for sure. The alien landscapes and strange cultures with people living and giant mushrooms and hollow beetle shells. The writing is incredible. The countless way to break the games rules and basically become god. I love it.
Also helps that it was probably the first big open world RPG I ever got as a kid. Fell in love immediately.

If we expand to entire Bethesda catalog, FO3 wins.

Morrowind for sure... I'd kill for a remake with current gen graphics and better NPC behaviour.
Skyrim is still cool, but the world of morrowind was insane, the time I discovered that mushroom city, it blew my mind.
And the freedom of the character building hasn't been matched since.. not even close.

I am an enemy of the existing order for good reasons.
