Emergency Vegetarian advice please! 2

I tripped over the fact i was eating a dead animal and found it suddenly unacceptable.
Salted like the dead sea, seasoned to pungency, nitrite added to pink up the fact i was chewing on discolored lifeless corpse stored processed for months at room temperature. old death. robbing a cold grave for food.
I want to grocery shop to go vegetarian right away, for the next few days as i study up on how to be a veggie.
I dont mind my eggs and yoghurt, those are excretions to give life.
I'd like a succesful vegetarian to break it down for any of us who want to go veggie or vegan. What do we do?

Go for plant based rather than just "vegan". The reason I put the quotation marks is because many processed foods are marked as "vegan" because they do not incorporate animal products. But these can often be less healthy than non vegan foods. The "vegan" label often times is used for marketing purposes only.
Incorporate a variety of whole grains, legumes and vegetables. Look for Indian food recipes, Thai, Asian, Mexican, Mediterranean... Google some savory vegan recipes. Stock up your pantry with a variety of spices. Experiment with different flavor combinations. Some recipes you will like, others you won't. After some time you will have a good collection of recipes you will enjoy.

I dont want to "do vegan" like people try fitness and they go two times and never show up, like you say VP123, india. A billion people in one country being primarily vegetarian, in such an old culture. If it was bad they would've quit by now.

Raiding the produce aisle is a bad way to go about it. Buying up a bunch of vegetables might seem like a good way to go vegetarian, but you need some balanced recipes and need to approach meals intentionally, otherwise you'll end up eating just bread and junkfood because of the lack of barriers to eating them, and gaining a bunch weight in the process.

Veggies, fruits, grains and beans/legumes would be my choice if you were to go full on Vegetarian.

Eat cheese and eggs and fish, dont try vegetize yourself its going to go poorly. Youll feel like shit and be bloated and lethargic on just plant material We are carnivore prefering omnivores, biologically. Plants were eaten to get by when animal protein and amino acids wasnt on the table

I was vegan over three years but I would eat shellfish if I needed/wanted.
Get a good milk, I liked cashew, look for ones with protein, you can get some with 10g protein.
Watch your carbs. Read up on what veggies have iron, protein, etc.
You'll feel better physically. I just started eating meat after 3 years of not.. and I dont feel as good as I did eating plant based.
I a not a fan of consuming dairy, I eat nondairy everything. Including protein.
I cooked with vegan eggs.
Going vegan was a spiritual thing for me also. I just read this book and then tripped.. and.. I couldn't.. I just couldn't do it anymore
You'll also lose weight. And be healthier . Last time I got checked and my labs came back perfect. My dr. said I was the healthiest 49 year old she knew  I was happy
Prepare to hear endless how do you get protein, this isn't natural blah blah. everyone has an opinion on what you do with your own body. Its weird

There's nothing plant based in the hydrogenation process of oils. But thank you for making the point I was trying to make a lot clearer. I guess I misspoke and should've written whole plant based. Meaning the least processing done to the plant.
Now, why would gopher, who every now and then goes on a carnivore diet felt compelled to participate in a thread where OP specifically asked for successful vegetarians is beyond me. But what do I know. Maybe he's crossed over to the vegan side.

There's tons of vegetarian cookbooks out there. I'm vegetarian except on vacation. I was vegan for a year. Some food that might make the transition filling would be potatoes, rice and beans. Maybe oatmeal?
Personally I'm a mostly vegetable person, but I know that's not for most people.

I was vegetarian for a while as a kid, lapsed for a couple decades, and then started eating vegetarian again a few years ago. I was surprised at how much easier it's gotten! I remember having to go to special hippie restaurants and weird food co-ops. Now it's pretty mainstream, at least here in the US. There are way more choices at restaurants and grocery stores now.
Oats is awesome. I have a big bowl of oatmeal every morning with walnuts, frozen blueberries, cherries, strawberries, peaches, almond extract and a little sucralose. Tastes delicious and fills me up.
You can make a big batch of filling for tacos and burritos. Saute some peppers, onions, and garlic in olive oil. Mix with a bunch of different beans, corn, cooked brown rice, salsa, and spices like cumin and chili powder. Then you just have to dice up some topping like lettuce, peppers, tomatoes, guac, and cheese and you have an easy meal.
Tofu is awesome and if you haven't learned to cook with it you should! It's very versatile and scratches the same itch as meat for me. Works great in dishes like stir-fry. I recommend getting extra-firm unless a recipe specifies otherwise. Preparing it takes a little getting used to coming from meat, since tofu's basically a sponge so things like marinades don't work the same way. But don't be discouraged, you can get some excellent results with it. Tempe and seitan are similar alternatives, I think they taste weird but maybe you'll like them.
Lots of options for good vegetarian pizza. I make mine with green and jalapeno peppers, onions, artichoke hearts and olives. Mushrooms would be an obvious addition if you like them. I use a pre-bought crust or if you're feeling really lazy you can buy a frozen cheese pizza and just add a bunch of veggies.
And not a vegetarian substitution but just a shout-out to chickpea pasta, which tastes really similar to regular pasta and is a much better choice for nutrition.
Indian cuisine is a trove of amazing vegetarian and vegan recipes. I could probably live the rest of my life just eating Indian food and be okay with it. Any Asian cuisine like Thai, Chinese, Japanese, or Vietnamese will have a lot of vegetarian dishes.
There are many good vegetarian soups. I make big batches of lentil and black bean soup to freeze. Pasta fagioli is good, you can get parmesan made with vegetable rennet if you care about that. Farro works well in various soups, it's healthy and holds up better than pasta or rice.
I'm not a big fan of fake meats and I'm using them less and less, but they can help ease the transition into vegetarianism. Fake beef crumbles in pasta sauce are mostly indistinguishable. Fake chicken nuggets and patties are generally pretty on-point. And if you're at a cookout or something, it's nice to have something you can grill. For brands you can get in the US, Boca Burgers have been around forever and honestly they're not bad, once you put a bunch of condiments on them they taste like any random fast food burger. Impossible and Beyond burgers are fine, they're a lot like actual meat, but they're not perfect. You might also prefer patties that don't try to be meat, like black bean burgers and chickpea burgers.

Make sure you get enough vitamin B12. I've always taken a multivitamin each day and I just kept doing that. You might also want to look into algae-based omega 3 supplements, or just eat a bunch of walnuts, chia and flax seeds, and hemp hearts. I've never had any problems getting adequate nutrition.
Going vegetarian is a great decision for many reasons and I'm sending you all my support!

My big thing is let's say you go to a party and there's ribs and burgers if you say I'm not going to eat this im vegetarian, The animal is still dead you changed nothing in that scenario but I do think the entire populous of vegan/vegetarians might help reduce meat production a tiny amount so go for it if it really makes you feel better.
That being said if I were to go veg I'd probably eat alot of fruit. Blueberries,strawberries,raspberries, peaches stuff like that but I wouldn't even know where to begin for dinners. The only vegetarian dinner I can think of is pad thai, it's just rice noodles,garlic,shallot,green onion,beansprouts, pad thai sauce(usually fish sauce,tamarind paste and palm sugar) and crushed peanuts, maybe a fried egg on top of that doesnt freak you out. That's a winner in my book

slowly adopt vegan/vegetarian stuff into your life, simple as that.
I'm vegan, my shit stinks, I am not better than you, I was just tripping balls years ago and couldn't think of consuming animals again because it felt wrong to me.
You might find some of Peter Singers work interesting, beware of vegan propaganda because a lot of it is rather negative. Nobody is perfect.
Nutritional yeast is amazing.
Drink kombucha over eating vegan yogurt because many say it works better.
Be careful for bone char, not everything that is vegan is actually 100% vegan, some hardcore vegans don't eat avocados because they think it's not good for bees (look it up), bone char is used to process white sugar, is added to oreos and sour patch kids and those two sweet treats are often considered vegan, so white sugar falls into a vegan grey area since it's hard to find out the source of the white sugar.
Try mostly whole foods, fruits, veg if you can.
Anyway, I feel a lot better not eating other sentient beings.

Only tip I would give is try and steer clear of the meat alternatives at the grocery store except for nights where you need a quick solution - just learn how to make cook tofu, make seitan, and other things like bean/lentil patties etc. Just healthier than all that processed crap.
Pinterest is honestly great for veggie recipes too.
Also agree with slowly phasing out meat, but that's because it's probably the only way I'll eventually kick the habit, so your mileage may vary, but it sounds more sustainable to me than cold turkey.

oh and watch oxalates - if you start pounding down almond milk any time soon or eat a ton of beans, nuts, raw spinach and a lot of leafy greens(though kale is ok), or anything like that, just make sure you're drinking lots of water - you can end up with a kidney stone quite easily otherwise - getting a bit of dairy will also have a bit of a protective effect against it.

i strongly recommend swapping out the sucralose for 1 of 2:
