Emergency Vegetarian advice please! * 2
    #28307887 - 05/05/23 02:22 PM (8 months, 19 days ago)

I tripped over the fact i was eating a dead animal and found it suddenly unacceptable.

Salted like the dead sea, seasoned to pungency, nitrite added to pink up the fact i was chewing on discolored lifeless corpse stored processed for months at room temperature. old death. robbing a cold grave for food.

I want to grocery shop to go vegetarian right away, for the next few days as i study up on how to be a veggie.

I dont mind my eggs and yoghurt, those are excretions to give life.

I'd like a succesful vegetarian to break it down for any of us who want to go veggie or vegan. What do we do?

Go for plant based rather than just "vegan". The reason I put the quotation marks is because many processed foods are marked as "vegan" because they do not incorporate animal products. But these can often be less healthy than non vegan foods. The "vegan" label often times is used for marketing purposes only.

Incorporate a variety of whole grains, legumes and vegetables. Look for Indian food recipes, Thai, Asian, Mexican, Mediterranean... Google some savory vegan recipes. Stock up your pantry with a variety of spices. Experiment with different flavor combinations. Some recipes you will like, others you won't. After some time you will have a good collection of recipes you will enjoy.

I dont want to "do vegan" like people try fitness and they go two times and never show up, like you say VP123, india. A billion people in one country being primarily vegetarian, in such an old culture. If it was bad they would've quit by now.

Sorry for the clickbait emergency title :datass:

Raiding the produce aisle is a bad way to go about it. Buying up a bunch of vegetables might seem like a good way to go vegetarian, but you need some balanced recipes and need to approach meals intentionally, otherwise you'll end up eating just bread and junkfood because of the lack of barriers to eating them, and gaining a bunch weight in the process.

Veggies, fruits, grains and beans/legumes would be my choice if you were to go full on Vegetarian.

Heres some Veggie recipes to inspire you: https://www.allrecipes.com/recipes/87/everyday-cooking/vegetarian/

And since its Cinco de Mayo, get some fresh Guacamole and Yellow corn torilla chips. Feliz Cinco de Mayo amiga!

I was vegan over three years but I would eat shellfish if I needed/wanted.

Get a good milk, I liked cashew, look for ones with protein, you can get some with 10g protein.

Watch your carbs. Read up on what veggies have iron, protein, etc.

You'll feel better physically. I just started eating meat after 3 years of not.. and I dont feel as good as I did eating plant based.

I a not a fan of consuming dairy, I eat nondairy everything. Including protein.

I cooked with vegan eggs.

Going vegan was a spiritual thing for me also. I just read this book and then tripped.. and.. I couldn't.. I just couldn't do it anymore

You'll also lose weight. And be healthier . Last time I got checked and my labs came back perfect. My dr. said I was the healthiest 49 year old she knew
I was happy

Prepare to hear endless how do you get protein, this isn't natural blah blah. everyone has an opinion on what you do with your own body. Its weird

There's nothing plant based in the hydrogenation process of oils. But thank you for making the point I was trying to make a lot clearer. I guess I misspoke and should've written whole plant based. Meaning the least processing done to the plant.

Now, why would gopher, who every now and then goes on a carnivore diet felt compelled to participate in a thread where OP specifically asked for successful vegetarians is beyond me. But what do I know. Maybe he's crossed over to the vegan side.

There's tons of vegetarian cookbooks out there.  I'm vegetarian except on vacation.  I was vegan for a year.  Some food that might make the transition filling would be potatoes, rice and beans.  Maybe oatmeal?

Personally I'm a mostly vegetable person, but I know that's not for most people.

I was vegetarian for a while as a kid, lapsed for a couple decades, and then started eating vegetarian again a few years ago. I was surprised at how much easier it's gotten! I remember having to go to special hippie restaurants and weird food co-ops. Now it's pretty mainstream, at least here in the US. There are way more choices at restaurants and grocery stores now.

Oats is awesome. I have a big bowl of oatmeal every morning with walnuts, frozen blueberries, cherries, strawberries, peaches, almond extract and a little sucralose. Tastes delicious and fills me up.

You can make a big batch of filling for tacos and burritos. Saute some peppers, onions, and garlic in olive oil. Mix with a bunch of different beans, corn, cooked brown rice, salsa, and spices like cumin and chili powder. Then you just have to dice up some topping like lettuce, peppers, tomatoes, guac, and cheese and you have an easy meal.

Tofu is awesome and if you haven't learned to cook with it you should! It's very versatile and scratches the same itch as meat for me. Works great in dishes like stir-fry. I recommend getting extra-firm unless a recipe specifies otherwise. Preparing it takes a little getting used to coming from meat, since tofu's basically a sponge so things like marinades don't work the same way. But don't be discouraged, you can get some excellent results with it. Tempe and seitan are similar alternatives, I think they taste weird but maybe you'll like them.

Lots of options for good vegetarian pizza. I make mine with green and jalapeno peppers, onions, artichoke hearts and olives. Mushrooms would be an obvious addition if you like them. I use a pre-bought crust or if you're feeling really lazy you can buy a frozen cheese pizza and just add a bunch of veggies.

And not a vegetarian substitution but just a shout-out to chickpea pasta, which tastes really similar to regular pasta and is a much better choice for nutrition.

Indian cuisine is a trove of amazing vegetarian and vegan recipes. I could probably live the rest of my life just eating Indian food and be okay with it. Any Asian cuisine like Thai, Chinese, Japanese, or Vietnamese will have a lot of vegetarian dishes.

There are many good vegetarian soups. I make big batches of lentil and black bean soup to freeze. Pasta fagioli is good, you can get parmesan made with vegetable rennet if you care about that. Farro works well in various soups, it's healthy and holds up better than pasta or rice.

I'm not a big fan of fake meats and I'm using them less and less, but they can help ease the transition into vegetarianism. Fake beef crumbles in pasta sauce are mostly indistinguishable. Fake chicken nuggets and patties are generally pretty on-point. And if you're at a cookout or something, it's nice to have something you can grill. For brands you can get in the US, Boca Burgers have been around forever and honestly they're not bad, once you put a bunch of condiments on them they taste like any random fast food burger. Impossible and Beyond burgers are fine, they're a lot like actual meat, but they're not perfect. You might also prefer patties that don't try to be meat, like black bean burgers and chickpea burgers.

https://www.happycow.net/ is a good resource for finding places to eat.

https://www.reddit.com/r/vegetarian/ is a friendly welcoming community.

Make sure you get enough vitamin B12. I've always taken a multivitamin each day and I just kept doing that. You might also want to look into algae-based omega 3 supplements, or just eat a bunch of walnuts, chia and flax seeds, and hemp hearts. I've never had any problems getting adequate nutrition.

Going vegetarian is a great decision for many reasons and I'm sending you all my support!

i got couscous
just add water
whip up a pesto
presto!

I'm not really feeling bread and fastfood anymore.

i mean, most bread has little that is healthy and fastfood has a lot that isn't.

My big thing is let's say you go to a party and there's ribs and burgers if you say I'm not going to eat this im vegetarian, The animal is still dead you changed nothing in that scenario but I do think the entire populous of vegan/vegetarians might help reduce meat production a tiny amount so go for it if it really makes you feel better.

That being said if I were to go veg I'd probably eat alot of fruit. Blueberries, strawberries, raspberries, peaches stuff like that but I wouldn't even know where to begin for dinners. The only vegetarian dinner I can think of is pad thai, it's just rice noodles, garlic, shallot, green onion, beansprouts, pad thai sauce(usually fish sauce, tamarind paste and palm sugar) and crushed peanuts, maybe a fried egg on top of that doesnt freak you out. That's a winner in my book

slowly adopt vegan/vegetarian stuff into your life, simple as that.

I'm vegan, my shit stinks, I am not better than you, I was just tripping balls years ago and couldn't think of consuming animals again because it felt wrong to me.

You might find some of Peter Singers work interesting, beware of vegan propaganda because a lot of it is rather negative.  Nobody is perfect.

Nutritional yeast is amazing.

Drink kombucha over eating vegan yogurt because many say it works better.

Be careful for bone char, not everything that is vegan is actually 100% vegan, some hardcore vegans don't eat avocados because they think it's not good for bees (look it up), bone char is used to process white sugar, is added to oreos and sour patch kids and those two sweet treats are often considered vegan, so white sugar falls into a vegan grey area since it's hard to find out the source of the white sugar.

Try mostly whole foods, fruits, veg if you can.

Anyway, I feel a lot better not eating other sentient beings.

A lot of good advice here already and I'm not even vegetarian so I'mma just post some good recipes - best of luck op, I took would like to cut down on meat a bit, I've meant to a while ago but I got stuck in a bit of a low carb mindset for a while, and it seems damn near impossible to go plant based on 30-50 net carbs a day without feeling like shit.

https://pinchofyum.com/lo-mein

https://downshiftology.com/recipes/shakshuka/

Only tip I would give is try and steer clear of the meat alternatives at the grocery store except for nights where you need a quick solution - just learn how to make cook tofu, make seitan, and other things like bean/lentil patties etc. Just healthier than all that processed crap.

Pinterest is honestly great for veggie recipes too.

Also agree with slowly phasing out meat, but that's because it's probably the only way I'll eventually kick the habit, so your mileage may vary, but it sounds more sustainable to me than cold turkey.

edit:

oh and watch oxalates - if you start pounding down almond milk any time soon or eat a ton of beans, nuts, raw spinach and a lot of leafy greens(though kale is ok), or anything like that, just make sure you're drinking lots of water - you can end up with a kidney stone quite easily otherwise - getting a bit of dairy will also have a bit of a protective effect against it.

i strongly recommend swapping out the sucralose for 1 of 2:

one is xylitol. naural product, looks handles and doses like sugar, tastes like sugar. eating 10gr a day is associarted with dental and bone benefits. worst it can do is giveyou the runs, but in some cases eating too muchmakes the perfect natural laxative, so dual use. in cooking more stable than sugar.

second is neotame, the carfentanil of sweeteners the beautifully named Center for Science in the Public Interest gives it the highest safety rating while sucralose and aspartame get the lowest. on ebay you can buy adorable 25gr mylar baggies, pure chinese label, 99% for like 5 bucks, equivalent to a 55 gallon drum full of sugar. that will last you a while.
if you have a gallon of liquid and drop about 40-50mg in, eyeballed, its as sweet as soft drink, at no conseqence.

In summer i take pharma propylene glycol, add ultrapotent flavoring like raspberry ketone (great one) or menthol, add neotame, put it in a pump bottle like for hand sanitizer and one pump turns a 1.5 liter bottle water, fizzy or flat, into lemonade. this evolved into me just adding a pinch of neotame to fizzy water diretly. that alone is a great softdrink.

Pescatarian or b12 info is a good place to start. You need ALL of the essential amino acids. Non-essential, well..

Anyways, it is 100% illegal to give diet advice.

I bought pills of a whopping 5000mcg B12, break those in four and take a quarter each day. 1250mcg still kicks like a mule and the bottle lasts 4x as long. cheap too.

theres no reason not to snap a vitamin pill in two if situation calls for it, 2 days half strength is better than a day without.

I learned from this thread that vegans go vegan because they dont want to hurt or kill anything

Im sorry but your plant food is bloody death for millions of mammalian creatures.

If you go vegan because you dont want to hurt or kill anything, or eat anything thats been hurt or killed, its just wrong. The ultimate solution be for you to starve to death , or eat only food that you gather from the wild (which you wont survive doing)

To be a true vegan, you cannot use ANY grocery store, you MUST NOT buy any produced food because the whole grocery store and every vegetable and vegan item has mammalian blood all over it

List the vegan foods you eat and ill find the pools of mammalian blood on them for you

Plant food production obliterates mammalian habitats and murdures them in the agricultural machinery. No plant food is ethical unless you harvest it from the wild

Especially soy product, tofu, soy milk, soy anything is equally bloody or more bloody than a pigswine slaughterhouse

Soy agriculture is one of the most abysmal things on Earth

Im not trying to be a dick to vegans, im just weary of vegans not knowing how damn bloody their food is. Its dangerous because the natural course of vegans is they make their kids go vegan and that is child abuse. Child vegans dont grow past 5 feet tall and are essentially crippled by their dellusional parents

one is xylitol [...]

There has been a growing body of research that sugar alcohols likely carry some pretty gnarly cardiovascular health risks.

erythritol is ten foot pole material, it stands apart from all others in a way that must give rise to trouble.

i saw nothing conclusive on xylitol though.

Honey is the #1 sweet. Its good for you. Avoid any synthesized or chemical sweetner

I generally agree.  If I want a zero calorie sweetener, I'll use stevia leaf.  I've grown the stuff before and although its sweetness differs from traditional sugar (all sugar substitutes do in my view), it is VERY sweet and a little goes a long way.  Often what I'll do, is use half of my intended honey or agave syrup dose, with a little bit of stevia to boost the sweet without altering the flavor profile as much.

Indeed, why inever tried it, both my dogs are dead now though maybe I'll see if I like it better than aspartame, I need something to sweeten my iced tea I make

Literally just cold brew a couple teabags in 2 litres of water for 12 hours, add some bottled lemon juice and sugar and its cheap and great drinkwhen you want something extra then water

I was spending too.muchmoney on carbonayed waters like bubly, I switched to the ice tea because 100 teabags is cheap and last 100litres

Not at all. I see nothing wrong with the act of eating meat.

I do see everything wrong with factory farming and the impact it has on the environment though - small scale farms with high animal welfare standards are ok, but idk how to reliably find that - so ultimately I would say wild game would be the most ethical way to be omnivorous. I'm also a hypocrite, and I will stick my head in the sand and buy grocery store meat, just trying to do less of that.

I also find vegan cooking really interesting and flavorful when done well, from a foodie perspective there's a lot of things you can experiment with.

for a weird reason only dogs have that effect.

i keep a public anonymous groceries advisory list at my local supermarket's site, and the only sugar products on it are an organic juice concentrate of assorted healthy berries without any additives intended for infants, and a high pollen honey of mixed wildflowers.

Unless you are making a bottle of rum, there is no reason to buy a bag of sugar.

Since we're on the topic of sugar alternatives, and apologies if this was already mentioned upthread - has anyone heard anything conclusive about monk fruit sweetener yet? I've heard some cautiously optimistic things about it.

I definitely feel way better when I cut or seriously limit refined sugar, but my sweet tooth demands a lil moderation - that said, I prefer the taste of monk fruit sweetener to stevia.

My car experiences pain whenever I hit the brakes too hard. I can tell by the screeching sound it makes.

It also has a tender spot in the middle of the steering wheel, apparently.

 that made me smile. Yeah absolutely I didn't realize how much I missed everyone until I was researching shrooms cuz I was trying microdosing for depression and I get back on and I was instantly looking for you, niffla, logical,Asante and honestly about 12 more people that really grew to be actual friends that I didn't realize meant so much to me.

I've changed a bit over the years but I remember thinking you were the coolest woman that I "knew" I always imagined you being in some super hip cool city going to like underground restaurants that no one else knew about or some awesome new band that you listened to before it became cool. Honestly my imagination was running wild (not in a dirty way or nothing) and I don't know how close I was but one thing I know forsure is you're cool as fuck. I'm really glad you're still around.

Hahahaha aw, dude, I tried so hard to be so cool and underground throughout my 20s probably to a cringier extent than it came off here, but maybe that's just how I feel looking back at myself  Change is good! If you're not changing you're not growing, I hope that you've been well though and that life is treating you alright.

@Gopher - any experience with monkfruit sweetener? Still on the low carb wagon or just limiting refined sugar?

On topic:

Found a vegan lasagna recipe, my grandma immigrated from Palermo and is probably sensing a disturbance in the force right about now, I think it's kinda pretty and creative.

Never tried monk fruit

The xylitol is making me take bathroom runs

I'm going to try neotame next

If I dont like neotame I'm going to try stevia or monk fruit

Not on low carb, with all my spending and saving I need to eat for $40 a week so buying random stuff on sale which is all unhealthy box stuff loaded with empty carbs

Luckily my morning meds reduce appetite so I dont eat much through day, like 1 small thing around 2pm

My night meds makeme munch out so I have a second larger meal at night

I'm trying to lose ten pounds my new overalls I ordered on amazon are a tad tight in the waist just bellow the belly button

Cutting sugar drinks is the first thing I'm trying, but I just fell in love with easy homemade ice tea so I need a sweetener

Justput 2-3 teabags in a 2l pitcher of water, wait 12-24 hours in the fridge, add some bottled lemon and sugar/sweetener

I switched to a mostly plant-based diet out of curiosity a few weeks ago and I have no regrets about it.  I still eat small portions of chicken/fish/pork about 3 times a week, but I can do less and be happy I think.  No vegetarian or vegan goals, I just want to eat less meat.  Aiming to eat less dairy; I still eat butter and yogurt, and I cut way back on cheese but get feta for my fix.  I never tried much of the fruity feta cheeses before, but fig feta might be better than sex.

My energy levels are through the roof but I'm also exercising and incorporating many other healthy changes.

I feel alive again!

Dairy is fattening, if I were to cut an animal product it should be dairy

Ever notice milk farmers are like a zillion pounds

Deff was saying oat milk is good, maybe I could put that in my coffee

The good thing about milk though is it fills me up, I could eat like 3 bowls of cereal dry, but only 1 with milk

Maybe next week I'll just get a smaller milk for my friend and get a oat milk for me

I've had oat milk before and it's pretty good.  I usually get almond milk because it's cheaper, but I've tried most of the "alternative milks" on the market and most of them aren't bad at all.  The exception would be rice milk but I haven't had that since I was 11 or so.

Cashew milk is great, rich and creamy.  I like the pea protein milk or whatever it is too.  Oat milk is up there, just more pricey than almond milk.  I get coconut milk sometimes but mostly use it for smoothies.

I stopped enjoying cow's milk around when I was late teens.  It tastes sour to me now even when it's fresh.  I still love cheese, but I eat way less now. The only cheese I've had in a month is maybe a couple of ounces of goat's milk feta
