A lot of good advice here already and I'm not even vegetarian so I'mma just post some good recipes - best of luck op, I took would like to cut down on meat a bit, I've meant to a while ago but I got stuck in a bit of a low carb mindset for a while, and it seems damn near impossible to go plant based on 30-50 net carbs a day without feeling like shit.

Only tip I would give is try and steer clear of the meat alternatives at the grocery store except for nights where you need a quick solution - just learn how to make cook tofu, make seitan, and other things like bean/lentil patties etc. Just healthier than all that processed crap.
Pinterest is honestly great for veggie recipes too.
Also agree with slowly phasing out meat, but that's because it's probably the only way I'll eventually kick the habit, so your mileage may vary, but it sounds more sustainable to me than cold turkey.
edit:
oh and watch oxalates - if you start pounding down almond milk any time soon or eat a ton of beans, nuts, raw spinach and a lot of leafy greens(though kale is ok), or anything like that, just make sure you're drinking lots of water - you can end up with a kidney stone quite easily otherwise - getting a bit of dairy will also have a bit of a protective effect against it.

Not at all. I see nothing wrong with the act of eating meat.
I do see everything wrong with factory farming and the impact it has on the environment though - small scale farms with high animal welfare standards are ok, but idk how to reliably find that - so ultimately I would say wild game would be the most ethical way to be omnivorous. I'm also a hypocrite, and I will stick my head in the sand and buy grocery store meat, just trying to do less of that.
I also find vegan cooking really interesting and flavorful when done well, from a foodie perspective there's a lot of things you can experiment with.

Since we're on the topic of sugar alternatives, and apologies if this was already mentioned upthread - has anyone heard anything conclusive about monk fruit sweetener yet? I've heard some cautiously optimistic things about it.
I definitely feel way better when I cut or seriously limit refined sugar, but my sweet tooth demands a lil moderation - that said, I prefer the taste of monk fruit sweetener to stevia.

Very happy to see you're still hanging around these parts too, it's crazy how important this place has become to me over time

Hahahaha aw, dude, I tried so hard to be so cool and underground throughout my 20s probably to a cringier extent than it came off here, but maybe that's just how I feel looking back at myself Change is good! If you're not changing you're not growing, I hope that you've been well though and that life is treating you alright.
@Gopher - any experience with monkfruit sweetener? Still on the low carb wagon or just limiting refined sugar?
On topic:
Found a vegan lasagna recipe, my grandma immigrated from Palermo and is probably sensing a disturbance in the force right about now, I think it's kinda pretty and creative. https://www.zuckerjagdwurst.com/en/recipes/vegan-rainbow-lasagna
