SPG’s Ginger probiotics * 1

Someone recently asked me about easy homemade probiotics since packaged, shelf stable probiotics are always sub par. Well, I’m on antibiotics for a never ending sinus infection and in need, so here’s how I make a fresh batch from start to finish. Whether it’s kimchi, poi, cucumber pickles, agua de Tibicos, etc, fermented foods are essential to our health, but this is the absolute easiest to make in a pinch. Enjoy!

I’ll be updating this daily in real time as it ripens.

1st Day

1) Start with a 2l double bubble air locked vessel. Dry air locks also work, but don’t let us measure the rate of fermentation, which is important later on.

2) Add 90g piloncillo. You can also just use sucrose for simplicity, but it lacks the micronutrients.

3) Add 1500ml purified drinking water. Any potable tap water will also work. The yeasts and bacteria will overcome any chlorine/chloramine.

4) Add 90g sliced organic ginger. Non organic ginger will have all the natural yeasts and bacteria killed by irradiation.

5) Close the vessel and add water to the airlock. There’s no reason to use anything stronger like everclear in the airlock since any bad bacteria will quickly be outcompeted.


2nd Day

1) Add 90g of sucrose. We don’t need anything as rich as the piloncillo again since those micronutrients will last a long time.

2) Add another 90g of ginger.

Already we can see bubbles forming on the glass and ginger caused by the bacteria producing carbon dioxide as a byproduct of glucose metabolism. The airlock should now slowly be bubbling, but it’s not ready to use yet.


3rd Day

1) More of the same. Add another 90g of sucrose.

2) Add another 90g of ginger.

We still have bubbles forming, but now I also see steady streams of bubbles rising like a soda. The airlock is now moving fast enough to see movement while watching, but it’s still not ready to use yet.


I’ll be updating with pics and further instructions daily as I feed it, up until I have my first drink.

Vitamin C will push chlorine/chloramine out of solution, home beer brewers use it as an additive to do this. There's probably enough vitamin C in the ginger.

Thanks. I usually drink it straight, but for the purposes of this recipe, I may use it with juice to show how to make probiotic soda in a champagne bottle. Depends on how lazy I am.

I wonder how this would turn out if I carbonated it with my soda stream?  Can I use erythritol instead of sucrose?

You don’t need the soda stream. It will carbonate itself to the point of champagne level if you let it. That’s how soda was made before we had compressed co2 cylinders.

Erythrotol is a sugar alcohol and definitely won’t work. It would also cost more than sucrose, but I’m curious why you would want to use something like that.

add some lemon and up the volume and you are basically making ginger beer - very tasty.

Off-topic heads up, there has been a growing body of research that sugar alcohols likely carry some pretty gnarly cardiovascular health risks.

Off-topic heads up, there has been a growing body of research that sugar alcohols likely carry some pretty gnarly cardiovascular health risks.




I've pretty much cut out all processed sugar from my diet starting 4 years ago now.  There are some sweeteners that I can no longer tell the difference and others that shouldn't even call themselves sweeteners.  I use In The Raw Monk Fruit sweetener with erythritol for pretty much everything these days and I really like it.  As for the pros and cons of it, I still think it's better than what processed sugar does to your body.

I'm currently working on cutting out caffeine.  I've never been a coffee drinker and recently the caffeine in just one bottle of coke zero is enough to make me feel funny.

Gotcha, sorry to hear that. I would have to find a new reason to live if I had any sugar issues! Salt is my kryptonite.

FYI, these ginger probiotics don’t have any sugar in them. Sugar is just what the yeasts and bacteria eat. Unless you add a sweetener right before you drink it, you won’t tast any sweetness.👍🙂

I didn't cut (added/processed) sugar because of any issues but more as an overall approach to living a healthier life.  I stopped eating allot of things and these days my diet is about 90% fruits, vegetables and meat with about 10% carb heavy foods like rice, pasta and bread.  As for sugar, I just think of it as unnecessary calories, 1 can of coke has 39grams (10 sugar cubes) of sugar in it.  Then again a banana has 4 sugar cubes in it so even with a natural foods diet you can still heap allot of sugar through your system every day.

With all that said, PIE is still my weakness.  And my best friend.  :smile:
