Beef fat/tallow cooking

If I cook up some minced beef and collect the fat how long would that last in the fridge and do I need to add anything to it before using it to cook with?

I wouldn't use it for more than a week.  If you want to keep it longer, portion it into the freezer.  You don't need to add anything to it before cooking, however if you aren't straining it first, there will be some beef bits left in it that can burn and/or affect flavor upon subsequent cooking.

Rendered out tallow lasts a long time, we render down two massive pots (starting out) at a time to have in the fridge for cooking at all times. My uncle fills his deep fryer with it, it’s fine even at room temp, much like butter but better

Yeah, I figure if the process is done well with a nice slow render and the harvested tallow pure, it'll be like most fats and shelf stable for quite a stretch... but if you're just collecting your pan drippings from a ground beef fry session, you wouldn't want to leave that out too long.

Yea that’s fair, I saw tallow and overlooked the fact that’s what was happening. Though I think if there was enough to be worth it one could strain it and put it back in the pot with some water and render it down further and it would be fine? I’m no expert though just fat inside
