DIY Sauce that go well with chicken

Looking for DIY homemade sauce for chicken. Love to hear the types of sauces everyone makes at home?

I like all kinds of curry with chicken.
The simplest would be to brown the chicken, then pour in a shot or so of coconut milk with some curry powder. Stir it around until you really smell the curry and the powder coats the chicken, then add the rest of the coconut milk and let the chicken cook fully in it. I always add a hefty dose of fresh chilis and/or chili powder as well

Not exactly DIY, hell not even really a sauce, but these things are great for an ultra easy chicken seasoning...


I don't typically "sauce" my chicken, although I do season it. Olive oil, garlic, salt, pepper at a minimum. Rosemary, lemon and thyme also work very well with the bird.
If I want a saucy chicken, I typically make a chicken stew / chili type deal, which isn't so much of a sauce as a whole other type of dish that happens to be saucy in its final form.

Seems pretty straight forward, ill try it out. Might as well marinate it overnight as well. See how that turns out.

Honestly didn't take a recipe down... it's more or less a "throw in whatever's in the fridge" kinda meal. My best guess would be as follows.
- Season chicken thighs with salt and pepper, brown in pan with olive oil, remove and slice into bite size pieces
- Onions/Celery/Carrots/Garlic diced and sweated in the pan with the chicken schmaltz
- Add stock & white beans & chicken back to pot
- Season with herbs of your choice and simmer for 30 minutes
- Add some greens, kale is nice because it holds up a bit better, but spinach is fine too. If adding spinach, just serve it right away. If using kale or other heartier green, simmer for a few more minutes first.
The photo above shows a baked sweet potato split and the stew/soup poured around it, with crushed red chili flake, grated parmesan cheese, torn basil and calabrian chili peppers on top.

Sometimes i'll make custom dipping sauce blends using different sauces.
For example BBQ sauce, ketchup (either regular or spicy) and a little mayo.
Another good one is buttermilk ranch mixed with Chululu hot sauce or Chiptole sauce. Tasty
