DERRAYLD said: So I haven't worked in front of the hood for a month because I had so much spawn and lc prepped. I had to do some pouring to get my spawn back up to stock but I'll admit I was a tad messy.
I somehow managed to set my blade hand alight again But I was chilled and just shook my hand to put the fire out I naturally turned away from the hood and did this, thought it was sorted until I turned back to the hood and saw I had somehow set my iso cloth alight.
So I picked it up.with the scalpel and dumped it in the sink near-by to burn out, that is until I remembered the sink was plastic
I managed to melt part of the sink and stained the rest in brown burn marks.

I'm a dumb-ass sometimes.
I'm glad you're ok man

Hunting opened me up to a world of flavor I wasn't even vaguely aware of. I like Hank's habit of pairing meat with the same plants and fungi from the land it came from.

Similar to dark meat chicken, as memory goes. I canβt confirm the rabbit comparison because itβs been ages since the only time Iβve had rabbit. But the squirrel Iβve had has been very very juicy, lean, and chicken-like in flavor.
I lived in the squirrel hunting capitol of Texas for years and years. Prime hunting grounds. Should have taken more advantage of it.

Am I just an idiot or this hobby incredibly frustrating sometimes?
I've been doing this for about seven months now and at every turn I run into issues. I've had reasonable success but most of what I do is fighting fires with various annoying problems.
My latest hilarious issue is probably my cat getting into my covered coir bucket and peeing in it because that's the only issue I can see. All of my shoeboxes have stalled but the spawn looked great - 18h soak and rinse millet, sterilised for 2 hours and cooled overnight, inoculated with a nice uniform T3 agar wedge under the flow hood after an alcohol spray, shake tested twice with good recovery time and inspected for wet spots or weird patches etc. Spawned to bucket tek CV slightly under standard field capacity at 1:3 v/v and placed into a Pasty mono. Result - weird surface blotching associated with bacteria and no pins after 3 weeks. Slight bacillus smell. Lovely.
It legitimately makes me so angry and sad and tests my mental health. I need to take a break. Everything fails at work and coming home to more failure is slowly killing me.

I find it hard to compare to anything else. Halfway between dark and light meat with a (no pun intended) Nutty taste to it. Squirrel lacks the gamey tinge of rabbit, which I find to be a bit more sour than than those nut obsessed tail flappers. Chicken doesn't really come close for me. It's by far one of my absolute favorite meats and I've got several ways I cook it. I'll quarter out the little buggers and braise the pieces in squirrel stock or another light meat stock until tender, then soak them in buttermilk with paprika, cayenne pepper, and Italian seasoning overnight. After that it's a quick roll in flour and salt, and then into the frier. Southern fried squirrel is a treat that cannot be beat!
