Hi, Yes I also bought some filter bags form Fungi Perfecti, in fact they just arrived yesterday, so I have not tried them yet. So, you were just using them for your casing mix? I usually just pasturize my casing ( 50-50 plus ala Ryche Hawk) in the microwave, using a microwavable dish and plastic wrap to cover it. Microwave until its steaming, mix in the lime and oyster shell while still hot and let it cool. works good, have not had a contaminated casing yet since I started pasturizing. I saw a site in which the bags were used by placing a piece of poly fill, the kind used by quilters, in the neck of the bag, and then putting rubber bands around that. I cannot remember the site, possibly Drooldonkey, or the lycideum ( sp?) . I'll see if I can find it, and send you a private message, if that is OK? Rxwoman.

Look for a Eurosealer for a cheap alternative for sealing bags. They work pretty good for a few bags at a time. They cost around $15 and can be found at most mart stores in the kitchen section. You can also do a search on ebay for impulse sealers. They can be had as cheap as $25 sometimes. You can just set the bags on the rack that sits in the bottem of the cooker. If your bags melt, it's cuz you don't have enough water in the cooker and it ran out of steam causing the metal to get overly hot.
