Papa a la Huancaina (Peruvian Yellow Pepper Cheese Sauce) 4

As none of you know, i'm peruvian born - raised in chicago, where i met my ex gf of 5 yrs. Anyhow, she's white from the suburbs & so cool that she learned how to make "Papa a la Huancaina," a peruvian appetizer:

RECIPE - 3 Aji Amarillo Peppers - 1/4 cup of Oil - more or unless to blend the peppers - 1/3 cup Evaporated Milk - more or less for correct consistency - 1/2 block on Queso Fresco - 1/4 cup Feta Cheese - Boiled Potatoes & Eggs
It's a traditional Peruvian recipe fairly easy to make (if you wanna surprise your family/friends). I found this best tutorial in english:

 "If you can't find fresh aji amarillo in your produce section, look for frozen aji peppers, dried peppers (in the spice section), or jarred aji amarillo paste in Peruvian grocery stores or in the Peruvian section of a Latin American grocery."

Nice, and yeah, finding aji amarillo peppers is going to be the most difficult task for us gringos! I always loved the many causas I enjoyed in Peru, as well as of course a well prepared lomo saltado, some delicious soups and seafood prepared all sorts of different ways. While I haven't really tried to recreate Peruvian dishes on my own, I do usually keep a sack of this crema de aji around, which I love in particular as a dip for roasted potatoes, but can be used on all sorts of stuff from pretty much any other veggie, as a sandwich spread, taco topping or a dip for grilled meats.

I also always keep a crema de aji like you said as dip for potatoes, veggies, meats and even chips or tostitos
