This is a simple, but lovely recipe. Store bought eggnog is trash, and if you even remotely like eggnog, this will blow your socks off.
Ingredients:
6 egg yolks 1/2 cup sugar ~1 tsp spices* (to taste)
1 quart or liter of Half and Half 1 tsp real vanilla (I use a Madagascar paste)
A candy thermometer will be used to make this a really quick but effective recipe.
* Your favorite seasonal spice profile. Traditional is 1:1:1- nutmeg, cinnamon, clove. Personally, I like it more cinnamon heavy, light nutmeg and clove. Pumpkin spice,apple pie spice, or a chai recipe would also be appropriate. This recipe is a blank canvas.

Start your hall and half on medium heat in a sauce pan. Clip the candy thermometer to the side, taking care the tip isn't resting on the bottom. Stir regularly with a whisk to prevent burning on the bottom of the pan. Keep the half and half below ~160 F (~70 C) and maintain a gradual increase in temp.

Meanwhile, separate your yolks and add the sugar and spice. Whisk until smooth.

Bring the bowl with the egg mix to the sauce pan and ladle in a small amount of hot half and half into the egg mix. Make sure the half and half is at least 100 F (38 C) before this step. Whisk in the warm milk and add more to the egg mix, a ladle at a time, to temper the eggs. Around a cup of liquid total should be mixed in.
4. Add the tempered egg mix to the sauce pan and increase the heat, continually whisking until the candy thermometer reads at ~165 F (75 C), then remove from the heat.
5. Add the vanilla as you continue whisking until you're too impatient and pour yourself a mug, or until it cools to ~160 F (~70 C). The longer you whisk, the more fluffy it will be fresh and warm, and the more velvety the texture will become after chilling.
Optional:
I like to make THC infused eggnog. 100 mg (or more if you like) of extract added to the sauce pan to melt slightly before adding in a little of the half and half helps diffuse it. Then when it's fully dissolved, gradually add the rest of the half and half and proceed as normal. This makes a nice 8oz mug with a 25mg serving.
Also, using half and half is based on a lot of traditional recipes using half milk, half heavy cream (which is h&h). If you like yours extra thick, use an extra cup of heavy cream.

I like a bit of good spiced Caribbean Rum in mine as well. Definitely gonna try this recipe.

You should try some cochito. It's also really easy.
1 can coconut milk 1 can coconut creme 1 can sweet condensed milk
cinnamon and rum to taste... no heating even. Some people call it Puerto Rican Eggnog, but it isn't a nog at all and has no eggs.

Actually I’ve had that a few times. A friend on mine at work is Puerto Rican and brings a bunch to the Christmas party every year. It’s pretty good, but I prefer the nog
