Candy cap dehydrating question

Hi, I am new to Candy caps (and dehydrating!) The recipe I found online for ice cream calls for already ground candy caps, but I can’t find much information about the process of dehydration, or making a powder :/ My question is- can they become too dried out while dehydrating? Since the Candy caps I found were small, I dehydrated for 4 hours. They seemed brittle and leathery (but still easy to pull apart) so I removed from the dehydrator and put them in a jar. I checked them today and they are a bit moist… is this normal? Doesn’t seem like they’d be easy to grind in this state, but I was concerned about overdoing it. Any help on what to look out for or check before grinding is much appreciated!

I would suspect that if your intent is to grind these to flavor your ice cream, you will need to fully dehydrate them such that they aren't leathery; cracker dry being the target.  On the other hand, if you wanted a texture component in your ice cream, keeping smaller chunks leathery may serve that purpose.  Probably not quite the texture I'd want to see in my ice cream though, as I imagine it would be rather chewy and prone to sticking in the teeth.
