The temp is around 78-80 degrees. The holes are open, should he tape them up?

My friend normally tapes his jars until they are 50% colonized and then he takes the tape off and inverts them. He has had problems in the past with stalled jars drying out and since doing this he noticed the cakes stay much more moist for a longer period of time. Sounds like you should be alright temp wise. The mid eighties is right where you want your jars for colonization.
