Yeah, the sooner the better. If you wait too long, it'll start getting moldy/bacterial.
If you can't PC it right away, the refrigerator is your best bet.

Yuuup. Once in fridge, I wouldn't wait more than a few days. Contams are still growing. Just slower.

Out of general curiosity lets say you had 5 or 6 bags and they sat for maybe a week after running in the pressure cooker but not inoculated yet. Smarter to cut it open and reprocess / rehydrate the grain or toss and start new?
Is reboiling or resoaking the grain even possible or after processing is it structurally altered?

You can keep pc'd grain for months, no issue.

Not long at all. I wouldn't recommend waiting over 24 hours unless you want to risk having bacterial/contammed grains. Mold will start visibly growing on the grains within 2 days in most cases. The higher spore count going into the PC the higher coming out the other end.

If the grains have been pressure-cooked and the bags are still sealed, the grains will not go bad for a long time. If they do start to contaminate, that probably means they weren't PC'd for long enough.
The issue is prepping grain and letting it sit BEFORE pressure-cooking.

Ya I was more thinking that the grains might dry out in the mean time more than having a contam issue. I do know the .2 micron filter patch does allow moisture to escape the bag (confirmed by a unicorn rep), I just wasnt sure how much moisture loss over how much time.

If you plan to store bags longterm post PC cycle, store them in an air tight tote or bucket.

If you had to keep a bag or three for an excessive time, couldn't you freeze them?
