Hurricane Ian put a rollercoaster through my first grow!

Hello! First Time growing and i'm using an AIO Grow Kit in a Bag from MushroomSupplies.com. I'm located in SWFL and my home was out of power for 2 weeks after the Hurricane hit. I was in the middle of my first grow but was suddenly unable to regulate the temperature which I was very concerned about. The house temps were in the mid 80's during the day and low 70's at night. I wasn't too sure what to do but after going back and forth a bit I finally decided to cut open the bag and let in fresh air to hopefully start the fruiting process. That was on 10/7. I was hoping to harvest them within 7-10 days but without AC or a light I was worried they wouldn't grow. I got my power back about 4 days later but still after about a week there was no growth signs. so I cut a bigger hole in the bag and tried fanning air into it a bit. After a few days I saw a glimmer of hope and within the next day I had a nice pin starting to make its way out! Here's what it looked like after another day or so on Monday 10/17 and then again today 10/20. Im excited! But now I have questions... Do they look healthy? How long until harvest? Can I harvest the one big one before doing the rest? Any other tips??

There's a couple of things here cultivators wouldn't like about this. First off it's a grow kit and they are notoriously NOT good. Second you might have dried them out by fanning. People here do not fan... Ever. Fanning is outdated practice. What you want is fresh air exchange.
But, on a positive note I don't see any contamination. I would harvest what you've got there. Pour some water in and let the sub soak for 12 hours or so. Dump the water out well, and go for a second flush.
Make sure there's are thousands of little droplets on the surface of the sub. Very fine mist. I'd seal the top completely and poke a bunch of holes going around every 2 inches in a grid pattern--starting from an inch or two above the sub to the top. This is what Fahtster does for his Fahtlocks aka Fruiting in Ziploc bags thread.

Sorry, this might sound like complicated advice, but I think this will give you the best results. And, congrats on the fruits you got! Some of them look aborted most likely due to getting dry, but they are good to eat!!

First off, Thank you so much for taking the time to help! So, I just harvested as many as I could, including the extra small ones (see pic below) and I misted the bag with distilled water. I wasn't comfortable enough with pouring in water but I'm hoping to get another flush still and then adding the water. Also, I think I miss represented what I was really doing when I mentioned "Fanning". The motion was more to billow air into the bag as a whole and not right onto the Mycelium but I will try to do more of an air exchange motion now. Are all of these mushroom's worth drying and consuming or are the really small ones pointless?

Thank you! Super Excited to try them!
I Was able to harvest about 11 Grams (Dry). I was hoping for a little more and I'm thinking I probably should've waited to pick the rest of the small ones. I'm optimistic about the next flush and will let them grow a little bigger but feel like I accomplished what I set out to do!

Quick Update: First flush was good (And Tasty ) but the second flush exploded in comparison! I sprayed distilled water on the sides of the bag the day of the last harvest 10/21 and was able to pick the following today 10/27!
