Dehydrating in two turns

Hopefully this is not too stupid a question. I started dehydrating some fruits. One hour in, I had to leave the house. I left them in the fridge for a few hours. On returning, they had all turned blue. I dehydrated them all the same for 7-8 more hours. They got cracker dry, but with a very dark, unappealing color. Are they still good to eat?
Thanks.

As long as they weren't rotting they should be fine. These mushrooms are still food & should be treated as such most of the time. Next time just leave them running in the dehydrator.

Thanks @CJD, so it was probably just bruising?

Yeah, if it is blue then that should just be bruising. How long was it in the refrigerator?

Pictures are the best for giving 100% good advice. But if they looked fine other than bruising before going back into the dehydrator then they're good.

Yah just treat like food can't go wrong. Temperature is the main thing in the fridge they golden for a week but room temp they'll maybe last 2-3 days
Unless your going to use them soon it would be best to re-dehydrate and store for the long term as any amount of moisture remaining WILL ruin them over time

This is the part I'm trying to understand, too.
They should be fine, though. It should all be more or less some form of bruising.
But it's still on you to make that call, especially with no pics.

Probably sketched out about leaving the dehydrator running, since it produces heat? I don't think it's a hazard, but I'm sure it says somewhere on the box not to do that.
