How do I work out moisture contrnt %

If I used 5 cups of Coir and 5 cubs of water would the moisture content be 50%? I guess it by weight to if 100 grams of water and 100 grams of coir would the content be 50% ?

You don't want to use a % base method here.
If you have a good understanding of field capacity, that's what you want to do. If not, follow a tek here (cvg and straight coir have been used and studied so much for so long, people now kinda know the field cap recipes to give you an idea and a place to start)

Unfortunately it's not that simple. If you really wanted to do the math and determine your moisture content, here is an old thread with a method to do so.
However, it's really not necessary to calculate your moisture content. As Rusty2096 said, you want to aim for field capacity. Field capacity is the point where the substrate is completely saturated, but isn't dripping any excess. You should be able to grab a handful of your hydrated coir and squeeze it, and only a few drops of water come out.
The exact amount of water you need to add kind of depends on the brand of coir you use. It might take a bit of experimentation. I use loose coco coir from a bag rather than the bricks, and I use a ratio of 1:2 dry coir (grams) to water (grams or mL). So 500 grams of coir to 1000 mL water.

you want to get your coir to field capacity. if you are tired of hand squeezing everything there are recipes here, and if you find that the recipes arent working for your brand of coir, make one batch the old way, weighing the coir before and after its hydrated, and use those numbers for future batches

If have it down pretty well for a CVG recipe, I am just trying to grow some Lions mane on sawdust + and aren't sure of the weights.

For sawdust / hardwood fuel pellets, I use closer to 3 parts water to 2 parts substrate by weight.
