I'm not sure exactly what the problem is though. I tried incubation with a thermal blanket insulated through paper so the temperature would be 84 degrees but that made the sogginess worse. BTW what do you use for incubation? I don't think this one is all the complicated and it works consistently for the most part(except for the soggy bottoms.)

hiroller, i think one of the problems is that i dont think that the oven bags are 100 percent water proof. i think they are made to be breathable. and i think thats why your bags are getting logged. if you see my thread "rye juice...so to speak" i mention it. and i think that might be one of the problems.

it sjust a thought, not prooven. for all i know i might have poked a small hole in my bag and not noticed it, and it used to be 100 precent waterproof, ya know..

Be reminded that the substrate temperature is roughly 10* higher within the container. So if your therm. is reading 80*, the jars are around 90*.

I dont use any type of incubation chamber, mainly because the substrate generates enough heat that even during the winter, colonization temps are acceptable.

The jars/bags are probably receiving too much direct heat, too. Try making the ambient temperature 80*, in other words, bring the air around the containers to 80*.
