Freezing dried libs

Hi everyone,

Quick question,

I froze two batches of dried libs, one of which I don’t know were dry enough or not. One of batches was dried over night in an oven and were beyond dry, crispy and still are crispy whilst frozen. The second batch was dried for less time in a food dehydrator and seemed pretty dry but after being in the freezer, are sort of soft ( while frozen) logically this would mean they were dry enough right ? Otherwise they would be hard from the water freezing ?

I’m unsure… what do you guys think ?

Sounds like your first batch was cracker dry and the second batch had still some moisture in it. Won't matter if you keep them frozen.

Libs are easy to get to cracker dry, even in an oven. Once you have removed all the moisture you can store them in an airtight jar with a couple of desiccant packs and an oxygen absorber. They will stay good like that till next picking season and longer. Freezing is not necessary and not that useful imo.

Well they were out of the freezer for an hour as my girlfriend took ages to bring them over so I hope that one hour of thawing before refreasing didn’t affect them…

As BY said, freezing is counter productive.  Just store them in an airtight jar with a desiccant in a cool dark area.

Refreezing thawed mushrooms that are soft is asking for trouble.
