I went to sterilize my tools before a SAB session today since they have sat idle for a while collecting dust and it's a practice I like to do anyway. I pulled my PC off the shelf and realized I never got around to emptying it after its last use. So, I dumped out the moldy water, washed the trivet with hot soapy water, washed my 1/2 pint mason jars (used to hold my trivet out of the water) with hot soapy water and began to wash the inside of the PC with hot soapy water only to notice that the bottom of the PC felt more coarse than I remembered. I rinsed it out to inspect closer and noticed pretty severe pitting inside the PC below waterline.



Fortunately I noticed this before I pressurized it and began working in the kitchen while it was on the stove. However, this stupid little lazy mistake I made set me back $172. Let my laziness serve as a reminder for anyone else who likes to procrastinate. You're not done sterilizing grain/agar/LC/tools until the PC is dumped, rinsed, dried and properly stored

No condolences are needed for this loss. This one is 100% my own doing. I have a busy schedule to keep and I procrastinate, I'm just hoping to keep someone else from making the same mistake. Seriously though, how long does it take to dump out and rinse a PC before putting it back on the shelf?! :facepalm:

I leave my PC on the stove until after I clean it.  That way it is in the way and the Mrs will "remind" me I need to take care of it. 

That is my guard against this. 

That is a sucky loss.

Sucks about the equipment investment, so thereโ€™s a lesson for any noobs reading this about maintenance and storage to prevent damage.

But the real lesson is about safety. Everyone should be inspecting their shit before use every time. Seals and gaskets wear out, relief valves can calcify over with hard water deposits, Gauges and thermometers can simply fail over time, and especially if handled roughly can become become uncalibrated.

Everyone thinks of PCโ€™s as standard kitchen gear because little old ladies have been using them to can green beans for a hundred years and when used properly, accidents are pretty rare. But pressurized vessels ainโ€™t no joke, and part of proper (safe) use is inspection.

Glad you caught it and werenโ€™t hurt.

im sorry to derail this thread with such a stupid question im just running my PC now and its occurring to me that i should probably ask this:

does ANY amount of steam mean im at 15psi? i always wait for the weight to start rocking but maybe im wasting gas. i see now why they sell PCs with gauges

What does the manual say? My AA says to start the timer at the first jiggle, it also says the guage is unreliable and I should rely on the rocker to indicate pressure.

its a mirro, single control. says to heat until it begins to rock, which is what i do. im just a bit confused because long before it starts rocking steam will be steadily escaping from the valve. one would assume that since the weight is in place and steam is escaping the vessel has reached 15psi, but maybe im missing something

Nah, it's when it rocks that pressure has been achieved. It's not a perfect seal so steam will escape well before that.

I tape 2 quarters to the top of my rocker weight so it doesn't rock/jiggle at all, which means I have to rely on the gauge entirely. So far I haven't had any issues with running the PC...just maintaining it :crankey:

I'm sure they're not even close to perfect. I'd like to get a thermometer in there eventually. I just really hate listening to that thing rock and roll for 2 hours and adding an extra quart of water in the bottom...maybe I should just take the advice and do it 'properly' lol

mirro doesnt sell anything heavier than a 15psi weight but im at pretty high altitude and im worried im not getting to 250...should i tape some weight on that thing? im nervous about it because A i dont have a gauge and B nowhere in the manual does it say at what point the overpressure plug will blow

Mine varries from run to run. I just do what the manual said and aim for the weight to jiggle around 3 times every minute

Ah fair enough. Rocker is definitely accurate anyway. I used it with 3 quarters for months, but now that I see how set and forget the rocker is I donโ€™t know that Iโ€™ll be going back.

Yeah, I never got why people had to babysit their PC until a recent conversation I saw on here about added weights.

I mean, I don't leave the PC on and go out but I'll go about w/e other shit I gotta do. If it's gonna blow up I'll hear the rocker going fucking nuts before it gets to critical.

if it was gonna blow up i donโ€™t think the weight would rock at all, no? unless you had a shit ton of quarters taped to the top. i was under the impression that most pressure cooker accidents were because all of the possible route for steam/pressure to escape were blocked


i had been wondering the same thing bakedbeings was wondering about reaching pressure & all that. i have an IR temp gun & figured the outside of the pot has to be around 250f if the inside is. had to add some electrical tape so the gun could actually read the temperature on the side of the pot (metals fuck up the temp guns & make them read incorrectly) & now after the vent i just use that to check if itโ€™s at 250f before lowering heat rather than playing the guessing game of โ€œam i at pressure????โ€

I'm pretty sure the pot will get hotter than the water. The pot is technically the heat source for the water, it's not quite like having something in a water bath and being sure it will only reach the temp of the water.

right, i doubt it's 100% accurate to the temp inside bc it'll sometimes be slightly above 250f but only by a few degrees, but i've been doing this for my past few PC runs now & haven't experienced any contamination on my agar plates or in my jars during storage for a week +. i used to just set a timer for 25 minutes because i was unsure of how to tell if i was at pressure with the added weight. it still makes all the same noises as when i used to let it get to pressure, but now i'm finding i can give it a lot less time & it still seems to be at pressure. the temp stays pretty consistent with the heat on high or low, whether i've let it build pressure for 20+ minutes or not etc. so i think it's working

Hmmm I never even considered the benefit of letting it rock and regulate pressure on its own and being able to leave the kitchen for longer periods of time. I think I'll do my next run without added weights just to see if it becomes white noise.

I'm not trying to keep this thread on track at all, but these temp/heat source questions might be good in P9s autoclave experiment thread. By all means keep discussing it here, I genuinely don't know the answers to these questions so I find it interesting, but this seems like the kind of thing he'd have an exact answer for lol.

It does feel a little sketchy taping extra weight to the rocker. I think I'll start playing by the rules..well, instructions. @SirPsycho are you adding the extra quart of water as per Prestos directions? Just don't want to run dry

p9 would def be the dude to answer that question. it's been working for me so i don't feel the need to get to the bottom of it personally, but it would be good to know if it's sound practice or not for the sake of knowledge

the quarter mod on the weight does sound sketchy, but people on here have been doing it for years & unless someone died & couldn't post that their PC exploded... i don't think anyone's PC has exploded from it. pretty sure it only increases it to like 17-19psi if you don't overdo it, but of course it's always better safe than sorry when dealing with pressure like that. gotta do what gives you peace of mind

sorry, i know you weren't asking me directly but i'm just curious. do you micromanage the PC while it's going? i have the added weights & just set it to low (like 3 or so on my electric stove) after it hits pressure & have never had to watch or baby it as it was going. i just set a timer & go about my business until it's done. if doing grains i add the extra quart (even with the added weight) bc more water isn't really gonna hurt anything & i'm paranoid of letting it go dry, but with setting it down to low heat i have plenty of water left over after

I think the worst part about it is that I don't *have* to babysit but if I don't check on it every 5 minutes I have a panic attack lol. After the vent cycle I let it climb to about 17psi on the gauge then drop the heat to about '7' on my gas range. It takes a small amount of tuning initially, bouncing between like '7.05' and '7.15' on my stove, but after about 10 minutes of monitoring it's pretty much automatic. For me is more about my own anxiety than it is that my PC fluctuates. Granted, this is all with 2 quarters on the jiggle weight. I'd love to get an electric autoclave/PC so I can truly forget about it but that's way out of my budget..

ahhh yeah i understand the paranoia. it took me awhile to just let the PC do its thing. i think part of it is just learning to let go lol. an electric AA would be fucking SWEET but yeah, i think money is better spent elsewhere for me right now lol.

What's been most helpful for me is figuring out the exact stove setting I want to achieve steady pressure once everything is up to speed, and just starting there from the outset. Once everything comes to pressure, I can turn it down a bit if it seems to be running high (the density of the contents still varies, as do things like ambient temperature).

Once I've gotten it set after that long warm-up period, I feel pretty comfortable leaving it until the alarm on my phone sounds. I feel 100 percent comfortable just sort of puttering around, and randomly walking past the stove.

My rockers are heavily weighted, to sit steady at 17 psi, and I rely on the pressure gauges for timing (turn off after 2 hours at or above 17)

I don't even wanna talk about the collateral damage that ocurred on my journey to this point.

Son of a bitch I just checked my PC after Iโ€™ve had it for like 6 months and itโ€™s pitting. Can this be also caused my metal jar lids and not properly cleaning after use? Itโ€™s in a ring shape so Iโ€™d imagine it didnโ€™t help.

Assuming you're talking about using lids to raise your trivet: I switched to crushed aluminum cans, resting bottom-side down, and have noticed significantly less discoloration and wear. I also only use plastic storage lids at this point, so there's really nothing inside the unit that could rust. The canner that I bought after fully implementing these changes looks 100% better. The older one still works fine, but there's definitely pitting and discoloration.

I like using my 1/2 pint jars to lift the trivet out of the water. Just put them in top-side-up, fill them with water (and the rest of the PC obviously), burp the air bubble underneath them and go. They're the perfect height so the trivet is just above water line when you're using 3 quarts. Glass is inert so it won't rust, but I guess if somehow one of them broke during the run that could cause some headaches

Yeah Ive been using the jar lids to raise the trivet. If Iโ€™m not mistaken if the canner is pitting you shouldnโ€™t use it right? Iโ€™m already mentally preparing to buy another one just wanna make sure. I think Iโ€™ll start using the cans like you or the half pint jars like the other guy said as Iโ€™ve got so many of em lmao.

I just finished christening my new PC. Sterilized my tools for 25 minutes at 15psi without added weight on the jiggler. I've gotta say that it is much easier to maintain 15psi without the extra weight. I'll just have to crank some tunes when I run it without added weights in the future because that noise bothers me lol.

All in all, the new PC performed as expected, it's just a shame I had to buy it in the first place. You better believe it's getting dumped and dried out before going back on its shelf!


Also for anyone interested: one thing that is good practice for PC maintenance is to regularly lubricate the sealing gasket. I use food grade silicon lube to keep the gasket from drying out and cracking. Every 4-5 runs I'll give it a quick greasing and when I'm done with the PC I'll store the gasket in a ziplock bag. Given the content of my OP I can see why you wouldn't want to take advice from me but it is a good thing to do.

so i thought of a little test to see if the IR gun was even close. i could measure the temperature of boiling water & compare it with the temperature of the outside of the pot.

i guess IR guns struggle to accurately read the surface temps of water because of steam obfuscating its sensor, but its consistent with the temperatures i read it would read the surface of boiling water at. the temp gun would fluctuate a degree or two when measuring the outside of the pot, but was consistently right around 212f.





here is the outside of my PC after a 15 minute vent & between 5-10 minutes of building pressure. i left it on high for about 15 more minutes & it maybe got 0.5f hotter. turned down the heat & it's sitting at 248-250f currently, about 45 minutes in.



not the most rigorous or intensive scientific test so i'm not gonna assert anything, but along side my plates & jars not contaminating after the PC cycle i'm personally comfortable enough to trust it.

Damn! I always try to bring the PC back up right after it gets emptied and put it on the counter so I know to wash it out. Sometimes it will sit overnight or just a little longer, but this is a good reminder to not let water sit in it too long I guess.

The only scare I've had was being close to running it dry once. I noticed the rocker started sounding like I had turned the stove off when I hadn't, and immediately took it off the burner. There was still just a little bit of water left when I took the jars out, but not much. Luckily I was nearby or that probably could have been bad.

I used to be scared of the PC when I first started out. Thought it was a bomb ready to blow up in the kitchen if I stopped looking at it or something...

When my wife was a little kid and her mother was tired of having her underfoot in the kitchen she used to put the pressure cooker on because it terrified her. Just one of the many things that have led to CPTSD.

I've had to do a lot of work explaining that it's safe if you know how to use it and do it right.

Iโ€™ve always run my all-aluminum, flat-bottomed, 23qt presto (the model designed for use with glass-topped electric stoves) with 3 quarters taped to the rocker, and always struggled to maintain a steady pressure. But then last night I started a cycle, vented for 15 minutes, took two quarters off and left only one quarter on the rocker, brought it up to 17psi and within 10 minutes of reaching pressure, Iโ€™d found a stove setting that kept it precisely at 17  with no fluctuations at all, despite the stove cycles.

It was awesome. I checked it every 15-20min anyway, just for confirmation. But it worked great. For my stove, 1 quarter on the rocker,  not 3! And i still didnโ€™t have to deal with all the bullshit noise (the reason Iโ€™d always ran with quarters in the first place) It was perfect.
