if you are growing in top soil, the surface should be covered with mold..im just wondering, how much? ie, does it have to be completely covered in a layer of white fluffy mold? or just some patches

Psilocybe cubensis has a sort of mycelial momentum. In other words, once you induce pinning, it will continue to grow vegetatively for a few days afterward. Some mushroom mycelium completely stops growing vegetatively immediately.

So, if you place your casing in the terrarium and induce pinning at 25%, it'll continue to colonize the casing layer until it ends up around 50-60% but placing a percentage on it is hard because this is only what you SEE. There's more than enough mycelium below the very surface of the casing to fruit, you don't need to see it for it to fruit.
