Pressure Barrel

Long time lurker first time poster. Right now I have my set up almost totally complete. The last remaining piece I have is my pressure barrel for sterilization.
I have a regular 55-gallon steel drum with a lid. The lid is where all the action happens. I have two holes drilled. One is for a 5-psi pressure relief valve. The other is for a pressure garage.
Last night I was testing to see if it would hold pressure for the first time and it seems like it does. The lid was starting to bend outward without any steam coming out. Unfortunately, however, my pressure gauge did not start to read nor was there steam releasing from the relief valve. This caused me to worry that nothing was working and a disaster was coming. I had this on the burner for about 50 minutes (without an insulation). When I manually released the pressure relief it seemed there was very little pressure, if any, considering the small amount of steam released.
Now to my questions: How long will it take to fill a barrel burning on a large turkey burner to build pressure? Note I have 10 gallons of water. What will be the approximate rate that the water will dissipate? Right now I don’t have a refill port/valve and wondering if 10-15 gallons will be enough water for an 8-10 hour cook at ~2 PSI

You have no idea what you are doing. 55 gallons of pressurized steam can kill you and others.
As you can see the barrel is not designed for pressure at all.
Even 5 psi is too much. 2260 lbs of force aprox in a 24" diameter lid at 5 psi...

This is how you get yourself killed. I can answer your question why it's acting that way but you shouldn't do this.
You can't sterilize grain worth a shit at that psi anyhow. Lots of farmers wish they could but it's a philosopher stone at this point.
That being said you can use this barrel to do atmospheric sterilization of master mix blocks but you only need boiling temps for like 8hrs to do that. MAYBE 1-2psi to be cocky depending on your elevation also.

It's best to always test a new drum sterilizer with an air compressor before using steam.
It's also best to never exceed 1 to at most 2 psi. As said above, you've created a bomb by having a sealed drum. Remember, when water turns to steam, it expands by a factor of at least 1600 at atmospheric pressure. Add some pressure and it's even greater if a rip occurs in the drum.
I'd open up that relief valve so it's always open during use. This will allow steam to constantly escape. Adjust the burner so only a small amount escapes after the first hour or so. RR

Hate to disagree with you RR but it's best to test something like this 100% full of water or other fluid and then pressurize the fluid.
Then if it fails there is no explosion at all. This is called "hydrotesting" and is (one of) the pro way to test a vessel.
Air pressure is still dangerous.

That would indeed be safer because water doesn't compress. The important thing is to keep the valve open so steam can constantly escape during use.
This is also important in the cool down stage. If the drum is sealed, it will implode on itself as if a giant hand had crushed a beer can. RR

I seriously thought this thread was a joke at first...
For a safety blowout pressure release, weld weld a very flat hunk of metal somewhere on the lid and find a very weak 1" diameter by 1/16" thick neodymium magnet. Drill at least a 1/2" hole in the hunk of metal then drop the magnet over to cover it. If you think the magnet is too strong either drill a bigger hole or put a layer or two of something like old jean material between it and the surface.
