Precise Pasteurization Tek * 4

Precise Pasteurization Tek

In this tek, I will show you how to use a simple kitchen appliance (Slow Cooker with Temperature Probe) to pasteurize casing with ease.  I've been using this method for quite some time now with consistent results.

This tek yields enough casing to cover a handful of tubs, and I also use the same exact casing formula as a seed-starter mix for cacti which I might spin off into its own guide.

The casing formula itself is the same formula as the one used by MacMerdin in MacMerdin's Simple Pan-Cakes.  I simply expand the formula x4, that's it.

Let's get down to it!

I'm using this model of slow cooker.  It does not matter which model you use as long as it supports a temperature probe.

Most people prepare casing without using an appliance like this, so it's by no means required to use this tek to prepare casing.  In the past I've had success simply soaking my casing in boiling water and using it the next day, but I've transitioned to this method because of how consistent and reliable it is.

You'll also need a 9-cup tupperware box like the one I'm using here, a 1-quart measuring cup, and a big bowl to mix the casing in.  Notice the tupperware has a small hole made in the lid which allows the temperature probe to monitor the casing through the appliance lid.

Start by preparing the casing itself: 1 quart vermiculite, 1 quart peat moss, 4 tablespoons gypsum and 1 tablespoon lime to raise pH.

If you're using bulk peat moss like I do, you'll need to sift out the twigs, sticks, pebbles, and whatever other goodies came in the peat.

1 quart peat moss, sifted to remove debris

Add 1 quart vermiculite to the peat, mix.

Now add the Gypsum and Lime to the peat. Notice how the gypsum and lime help "outline" any remaining debris like rocks or twigs, making it easier to spot them.

Once the casing has been mixed well, transfer it to the tupperware box.

At this point, boil 1 quart of water.  When it's done boiling, pour it over the casing and place the tupperware lid over the box.  This water is what puts the casing into field capacity and also helps kick-start the pasteurization by increasing the heat from the get-go.

Now fill the slow cooker pan with enough warm water so that the tupperware is suspended in it.  This water is what will be responsible for heating the casing during the pasteurization process.

Place the slow cooker lid over the appliance and place the plug through the lid, into the tupperware.  We're configuring it so that the probe monitors the temperature of the casing, and the surrounding water (outside the tupperware) will be responsible for maintaining the set temperature.

Set the appliance to cook at 160 degrees, using the 'Probe' setting.  You'll find that this is actually the default setting since these are generally designed with pasteurization in mind.

I usually let this pasteurize overnight.  Enjoy!

Hi guys, if anyone has a more accurate or accessible title for this Tek let me know and I'll go and change the subject of the post, I did not know what to call it.  Also bumping just this once to get more visibility onto this.

Great write up, makes me feel like I can actually pasteurize something, and I never thought I could

I like the title, it’s just too long, I think either one will work

Just keep it simple:
SC sub/case (Slow cooker substrates)

Sounds like you could even achieve this in a sous vide.
